Potato Salad I

This was good when you got a bite of celery & peppers with the potatoes, but otherwise the dressing was a little bland. Pretty easy to put together,though.

Chicken Enchilada Soup I

Tasted just like enchiladas! Very easy to make and delicious! Made enough for 4 generous servings. The tortillas did turn to mush, so if you don't like a chowder consistency, add them at the end and allow to soften slightly before serving. Either way, delicious!! Will definitely make again and again.

New England Dinner

The flavors are subtle, but very good. I would suggest a bit of sour cream on top. I sprinkled a little garlic, oregano, salt, and pepper on top before putting into the oven. Also, it took an hour to cook - maybe covering with foil will help. This recipe is sinfully easy and makes a great amount of food. Perfect for the working woman who depends on leftovers!

Challah II

I made this for Thanksgiving...it was perfect! Made a very large loaf! The dough is a little sweet and very moist and delicious. Tastes excellent slightly warmed with butter on top. I'll definitely use this again.

White Russian Brownies

These brownies are kick-you-in-the-rear delicious! After brushing the kahlua on top, let them sit overnight. The alcohol will evaporate an all the flavors soak in. They are SO GOOD! I took the recipe to an annual bake-day with some friends. None of the brownies even made it out the door! Kudos to the chef!

White Chocolate and Cranberry Cookies

A wonderful variation to the traditional chocolate chip. These make wonderful holiday cookies and are SO easy to put together! I made them with blackberry brandy....DEE-LISH!

Brownie Biscotti

These were so easy to put together. Letting them cool for the entire half an hour kept them from crumbling when I sliced them. I drizzled them with some melted white chocolate before serving. I only managed to save two! I'll definitely make these again and again.

Fruit Cobbler

This is an excellent recipe! Very quick and easy to prepare, it was moist and not overly sweet. I made it for a women's group meeting and handed out two copies of the recipe. I used canned peaches and mangos for a little tropical flair! I'll definitely make this again and again.

Bierrocks I

These are pretty good. I don't know if I used too little cheese, but the filling was kind of bland. I definitely want to try them again because I love the idea and the dough was really delicious and easy to make. I'll probably tweak the filling a little bit...maybe try pizza toppings or fajita ingredients. These keep well in the freezer and reheat for a quick dinner or lunch.

Barbecued Meatballs

I halved the recipe, made the meatballs a little bigger, and served w/ a baked potato and some veggies as a main dish. YUMMY! It was easy to put together and the variations are endless with all the different varieties of bbq sauce that exist today. The leftovers kept well in the fridge and made for an easy dinner the next night, too!

Jiffy Cinnamon Rolls

These were so easy to put together! I thought they were a really good substitute for yeast cinnamon rolls when you're in a hurry. Keep an eye on 'em, though! I accidentally let them cook a few minutes too long and had a hard time getting them out of the pan.

Tasty Buns

Oh, hallelujah! These buns are the best things to come out of my oven yet! I halved the recipe and shaped the dough into 8 balls instead of 6 for PERFECT moist dinner rolls in no time whatsoever. I can't wait to make more of the larger ones for sandwiches and hamburgers. With a little help from a Kitchenaid, this was the easiest recipe I have tried yet. Thank you for a wonderful, fail-proof, EXCELLENT recipe that will definitely stay in my collection!

Soft Pretzels I

Everything went well until I tried to lift them off the pan to boil them. Since the dough had risen, they were very delicate and were easily misshapen in the transfer process to the pot of water. Then they came out looking really weird. They taste good, though. And since they were boiled, they stay moist for awhile. So if you can't eat them all right away, they keep pretty well in a Ziploc bag. I think I'll try some other recipes, though.

Ripe Olive Potato Salad

Oh, man, I will never make another potato salad!! The dressing was delicious. I like mine a little "wetter" though so I'll probably double the dressing recipe next time. But the flavors are awesome and it smells so good after sitting all night. Not difficult to make at all. I used red-skinned potatoes and black olives right out of the can. It looked great and tasted so flavorful and refreshing on our 4th of July picnic. Thanks for the recipe!

Spicy Oatmeal Cookies

These cookies are so easy to make and absolutely wonderful! The spices and banana mix well to create a great flavor. I made one batch to take to work. They were snatched up so fast I made another batch that night to take in the next day. A great way to use ripe bananas that you have on hand. I will definitely make this again.

Florentine Artichoke Dip

Oh, oh, WOW!!! I made a half-recipe when some friends came over this weekend for an appetizer. I'm glad I didn't make the whole thing because we would have eaten it all up and ruined our dinners! This is by far one of the best recipes I have tried. So, so, so easy and the results are wonderful!! I cannot wait for another excuse to make this. YUM!

Chicken and Dumplings III

This was a great, tastes-like-it-took-all-day meal. I added a cup of frozen mixed veggies and used cream of chicken and cream of mushroom. I also cooked the chicken in broth as suggested. It was a bit salty for my taste, so I think next time I'll use half broth and half water. EASY, EASY, EASY to put together. A great meal-saver for the weekdays.

Ham and Cheese Quiche

This was great! I used half a package of frozen spinach, thawed and drained and got fabulous results. I diced the cheese and mixed it will all other ingredients before pouring into the shell. You get a bit of everything in each bite! Served it at a tea party and got lots and lots of compliments. Easy to put together and great-tasting. Very adaptable, too, if you have other ingredients you'd like to add.

Becky's Oatmeal Carmelitas

I made these with some friends at an annual cookie-baking day. We burned our hands on the hot filling cuz we could NOT wait to eat them! :o) These are sooooo delicious. And since they're fairly rich, you can get 32 servings out of the pan. Perfect for a pot-luck or when you need a lot of something fast. The recipe couldn't be any easier. I will definitely make these again!

Sean's Falafel and Cucumber Sauce

Really enjoyed this. Very flavorful and easy to put together. Use store-bought tzaziki sauce instead because I couldn't happen to find plain yogurt, so I can't comment on the yogurt sauce. But the falafel were wonderful. Even got my un-adventurous husband to give them a shot! Will make again.
