Pineapple Angel Food Cake I

Lemon Cupcakes

Excellent recipe, very light and fluffy with a hint of lemon. I didn't have self rising flour so I followed the others advice to add 1 tsp baking powder per cup of flour. Perfect recipe as it is, if you want it more lemony add more zest or lemon juice! I might try lemon extract instead of vanilla next time.

Crunchy Caramel Corn

The best i've ever had!! Just watch the timing, if your microwave is powerful the 3 minutes at the end will be just a little too long. I find with mine it's about 2 1/2 minutes, stirring every 30-45 seconds. Thanks for the amazing recipe :)

Avocado Feta Salsa

Amazing!!! I did change it a bit, did the cilantro instead of parsley as I love cilantro and that's what I had in my fridge. I also used balsamic vinegar instead of red wine vinegar. It is the best salsa I have ever eaten!!

Crispy Fried Fish

Great recipe, used Salmon instead of cod and didn't have cajun seasoning so I used Montreal Chicken Spice. Had no problem with batter but followed a lot of others advice. Patted fish dry, then put in batter, then in cornflake mixture. Made a new batch of cornflake mixture for each piece so it was always crispy. Put in fridge for about 15 min before deep frying. Very very crispy and very tasty!!

Poppy Seed Chicken Casserole

Amazing just as it is but I changed a few things and with my changes would give it 6 stars!! I added about 3/4 cup thawed peas/carrots to the sour cream / soup mixture as well as about a tbsp or 2 of Italian Seasoning. Then to the cracker/butter mixture I also added a tbsp or 2 of Italian seasoning and about a 1/4 cup of parmesan cheese. Absolutedly amazing!!!

Ground Beef and Rice with Cheese

This recipe was great with a few minor changes. First change the ratio of rice and water and double the amount of rice. 2 cups rice 4 cups water. Then I sauteed onion and garlic before adding the ground beef. I did 1 tbsp montreal steak spice and 2 tbsp chili powder. I did only 2 layers instead of three as I found I didn't have enough rice to do three layers even with doubling the rice. Overall I really liked this recipe it's quick, tasty and uses ingredients I always have on hand!!

Best Big, Fat, Chewy Chocolate Chip Cookie

these are the ultimate chocolate chip cookies, everyone loves them and wants the recipe. The only thing I changed to make them even chewier was to change the white sugar to brown sugar so I only used brown sugar, I believe 3 cups (I always double the recipe). LOVE IT!!
