English Trifle

I turned a failed cake (didn't rise) into a nice desert using this recipe. The crowd enjoyed it. I think that adding some liqueur would be a nice touch.

Bean Soup With Kale

I love homemade soup and this is one you can throw together on a weeknight without much trouble. I agree with some of the other reviewers about the salt. I added 1 tsp. salt and found that I didn't need that much due to the salt from the beans (I used low sodium chicken broth).

Triple the Ginger Cookies

Very good cookies. My first pan did not cook very evenly. The second pan came out perfect. Next time I will let the pan containing the balls of dough come closer to room temperature before baking.

Mincemeat Crumb Bars

This is a delicious recipe. As suggested by others, I did not add the icing. The bars are plenty sweet without it. I may add some walnuts next time. These freeze well.

Elvis Presley Cake

This recipe is a keeper. I did make some revisions though. I only used 1 cup of sugar in the syrup and reduced the sugar in the frosting to 3 cups. There was still plenty of sweetness. I used someone else's suggestion and sprinkled the pecans on top. (I thought the frosting would look lumpy with the nuts mixed in).

Chicken and Bean Burritos

I couldn't find Ortega burrito seasoning mix, so I used another brand. I found it too salty. The recipe is very easy to make, so I may try it again if I can find the Ortega brand seasoning. (Or better yet, come up with my own seasoning.)

Cheesecake Supreme

I read the reviews before making this cake and decided to omit the white sugar in the crust. I also increased the temperature by 50 degrees and baked it for about 1.5 hours. This turned out to be an excellent cheesecake!
