Tomato Bacon Grilled Cheese

I craved this non-stop during my pregnancy. It seems like an odd combo, but is very yummy. I even got my hubby hooked on these. So needless to say, we still make these for a quick dinner, even though I'm not pregnant.

Apricot Cashew Clusters

This recipe seemed way too easy, but I gave it a try anyway. I can't believe the results of this super simple recipe. My family LOVED these, and this recipe let my imagination run wild. The first batch was dark chocolate, dried apricots and pecans. The second batch was dark chocolate, pistachios, and dried cherries. The last batch was dark chocolate, shredded coconut, and dried tropical fruit. They were all amazing! I couldn't even choose a favorite. I have all kinds of plans for different nut/fruit combinations for this recipe. This would also be a great idea for quick and simple Christmas candies for family & friends.

Healthy Banana Cookies

I am not a fan of dates, so I added 1/2 cup dark chocolate chips, and 1/2 cup chopped pecans. I also added a tsp of cinnamon, and 1/4 cup sugar. These came out wonderful! Much better than I expected, and they are still pretty darn healthy. Next time I am going to replace the dates with chunky peanut butter, YUM!

Fresh Lemonade

We've made this a few times already, I wasn't too sure at first b/c it's so sweet, but it ends up being super addicting. This is so yummy! Perfect with a summer dinner.

Michigan Beans and Sausage

I made this as written, in the slow cooker for 5 hours, then transferred it to the oven, uncovered, for an hour to thicken it up. Turned out perfect, just like I had growing up!

Butternut Squash Supreme

This was very different from most of my squash recipes, so I wanted to give it a try... Unfortunately, Nobody in my family would eat more than one spoon full, myself included. The onion overpowered everything else in the recipe, and wasn't even cooked properly. I ended up having to mix the entire dish up with brown sugar and butter, and baking an additional half hour to try to cook the onions. Even after doctoring this dish, it was still only a 2 star recipe. From now on I will stick to my family's favorite squash recipes.

Pepperoncini Beef

This was great! I made this as written, but when I did a taste test after 6 hours in the slow cooker it wasn't very spicy. So, I added 1/2 jar jalapeno slices with juice. That did the trick! This turned out great for subs. We even used the dripping as Au Jus, but we LOVE spicy!

Slow-Cooker Pork and Apple Curry

I had my doubts about this, but it actually all came together really well. I added a tbs of crushed peanuts and a chopped sweet potato. My whole family loved it. I will definitely make this again.

Pudding Poke Cake

I made some simple substitutions and made this for a low cal dessert for my family. I used reduced sugar yellow cake mix, made with egg whites, applesauce and water. I also used sugar free chocolate pudding for the topping. Then I topped it with a dollop of sugar free cool whip. My family had no idea that it was pretty healthy treat. YUM!

I don't know what went wrong here, but none of my family liked this... it was way too thick and rich, and not very spicy . It was almost unbareable to eat more than a few bites.

'So This Is What Heaven Tastes Like!' Cream Cheese Bars

My family loved these! However it took 45 minutes for them to bake. I used real butter and opted to not add cherries. I also decided to keep these bars in the frige after cooling, which made them much better. They were moist, rich, and not too sweet. I will definitely make these again.

Gingerbread Pear Cake

I followed the recipe exactly, but made these in a cupcake pan. They looked like tiny little cakes, very pretty, but I was the only one who actually liked them. Although, my family is too fond of gingerbread in the first place. I may try this again with a different cake mix.
