Roasted Brussels Sprouts

Delcious and super easy. I love how the ingredients are simple and healthy- no need to drown perfectly good brussels sprouts in heavy cream or bacon!

IMPORTANT: Let this cake sit for at least 24 hours... the venegar smell/taste fades with time, and after a day or two you're left with the most moist, melt-in-your-mouth, BEST cake you have ever had! Don't know if this has anything to do with it, but I added a two cubes of melted unsweeted baker's chocolate to the batter because I wanted it to be more chocolaty. This cake tops all vegan and non-vegan cakes!

Veggie Vegetarian Chili

4 stars as-is, but with my variations it's a 5 star recipe! I subbed about a cup of diced zucchini for the mushrooms, and added some special ingredients that my Dad uses in his signature chili- two bay leaves, a heaping teaspoon of brown sugar, and a dash of cinnamon. I served it with a splash of almond milk to make it a little creamier. DELICIOUS!

Microwave Baked Apples

YUM! I was skeptical of doing a microwave version of this but the result was delicious, and it took no time to make. I added raisins, cranberries, and crumbled toasted walnuts with the spice and sugar mixture. Also, since I'm vegan I omitted the butter and just put about a tablespoon of water over the top and it was perfect!

No Bake Chocolate Oatmeal Cookies

Absolutely delicious and took no time or effort to make. I used 1/2 cup agave nectar in place of the maple syrup and it worked perfectly. I will be making these again and again!

Vegan Mexican Stew

I am a new vegan but have loved Mexican food forever, and this is the perfect vegan replacement for my favorite chicken tortilla soup recipe- so delicious and so flavorful you don't even notice the absent of meat or chicken broth. Another amazing thing about this recipe is that it is SO EASY and can be tweaked depending on what veggies you have on hand. Hard to mess this one up. 5 stars!

Vegan Carrot Soup

This soup was delicious! I am giving it 4 stars instead of 5 only because I did have to add more broth to reach soup consistency and add more curry as per other reviews. It was extremely flavorful though for such an easy recipe with simple ingredients. I have been looking for vegan recipes that I can take on the go with me during the work week and this is definitely one of my go-to meals.

Pizza Roll-Ups

They tasted really good, but the crescent dough isn't tough enough to hold up to the sauce. They got pretty soggy on the bottom. I would recommend using a pizza dough recipe instead.

Skin-on Savory Mashed Potatoes

So good! I love the texture that the skin gives the mashed potatoes- it adds a little more substance and more nutrients as well. Works great with gravy but the basil and garlic give it such a great flavor that it really doesn't need anything added!

Vegetable Fried Rice

YUM! I was looking for a quick breakfast and a way to use up the rice pilaf left over from last night's dinner, and this was perfect! Great way to use up leftovers, plus it works great with frozen veggies too- I used a pepper/onion frozen stir fry mix and used frozen peas and frozen edamame. For a little more protein- and just because I like it- I added an egg at the end and mixed it around. So easy and so good!

Dairy Free Cinnamon Streusel Coffee Cake

This was good, but I didn't read all of the reviews or I would have been aware that it turns out pretty dry. I would make this again but next time I will add some applesauce to the batter. Also, I folded in blueberries after mixing the other ingredients- it's a nice variation.

Avocado-Mango Salsa

So since this is my fourth time going back to this recipe in just one month, I figured I should probably rate it. My family can't get enough of this salsa, and since I'm a health-nut I absolutely love that this salsa is a fresh, nutrient-packed accompaniment to almost anything. My favorite way to eat it so far is to serve it over grilled tuna steaks. Pair with the "fat free refried bean' recipe on this site and you have an amazing meal!
