Ciabatta Bread

Not the best texture or crust, but certainly well worth the short time spent to make it. I made 1 large round loaf. Very nice to look at, sliced well, great fresh out of the oven and also for toast. Definitely a keeper recipe.

Gingery Carrot Salad

Used this as basic recipe. Used uncut baby carrots; subbed red wine vinegar; subbed honey; subbed regular salt and pepper; left out raisins; added cilantro as others suggested. All spices were Penzey's dried. Excellent!

Trifle

Really changed this up, but a great starter recipe for me. Cake mix cake; no jelly; liquid jello poured right over the cubed cake; pudding on top of that when jello set up; whipped topping on top of that. Not bad for a quick dessert.

Wonderful taste! Maybe the addition of sugar - I've never used that with cabbage before. Low fat, low calorie. Definitely a keeper.

Pumpkin Pie Pudding

Used 2% milk instead of canned. Left out the butter; forgot the vanilla; upped the spice to 1 tbsp; dropped sugar to 1/2 cup with 1/4 white and 1/4 brown. Only needed to be cooked for 3 hours. Fabulous! Will make more subs next time to drop the amount of fat. Didn't even need any whipped topping and was great hot and then cold the next day.

Croutons

Great basic recipe! Used olive oil on bread with the crusts left on. Sprinkled with Penzey's italian herb mix. Baked 25 minutes. Great with soup! And so easy!

Pear Bundt Cake

Prepared exactly as written except used a chocolate glaze instead of powdered sugar. Also, prepared pan with Pam and then coated with Penzey's vanilla sugar. Great cake but no pear taste at all. Will try peaches and some spice next time. Next time was today. Used yellow cake mix with 2 whole eggs, 15 oz. canned peaches and some Penzey's baking spice. Excellent. More of a peach flavor. Pan was prepared with Pam and vanilla sugar as before. Definitely a keeper recipe.

Stewed Cabbage

Great starter recipe. Added extra stewed tomatoes. Added carrots. Lots of salt in tomatoes, so left the extra salt out. Added some cooked chicken sausage the last 10 minutes and served this all as a main course.

Dill Pickle Meatloaf

Subbed oatmeal for the bread as I do whenever I make meatloaf and didn't add the pickles for the top. Other than that, followed the recipe. What a treat! Even my dill pickle haters ate it warm for dinner and then again cold the next day. Will make again.

Cranberry Dip

Too sweet; kind of like dipping up cranberry sauce at Thanksgiving. I tried to mix in the cream cheese to make it easier to dip and it just didn't look very appetizing. Won't make again.

Basil Tomato Soup

Excellent - made changes based on what I had on hand. Used canned tomatoes with their juice and tomato puree. Used dried basil - add that just before serving. Used 1/2 and 1/2 instead of whipping cream. Made this many times and it's always a hit!

Prego® Porcupine Meatballs

Used brown rice. Definitely need to tweak the spices quite a bit. Not very flavorful. Will try to use some chix broth when cooking rice next time.
