Vinegar Grilled Chicken

Really, really good. Especially cold the next day. The vinegar flavor really makes it over the top! Used red wine vinegar and subbed olive oil for the margarine. Also, baked in the oven.

Pasta with Clam Sauce

Reviewed: May 22, 2013
I liked it - others did not. I subbed 1/2 and 1/2 for cream and subbed cut up chicken breasts for the clams. I know, I know, not really the recipe, but thought chicken would work better. I definitely will try it next time with the clams!

Had the butcher put the meat through the tenderizer; added paprika as some suggested; baked covered in the oven at 350-375 bout an hour. Excellent - had no leftovers!

Cauliflower alla Parmigiana

Reviewed: May 22, 2013
Changed it up a bit but the basic idea was the same. Made my own breadcrumbs with panko, melted butter and penzey's lemon pepper; then mixed that with the cheese and proceeded as the recipe suggested. Will make this again!

I did add 2 T honey as someone suggested and I subbed red pepper flakes for the cayenne. Marinated about 8 hours. But it worked out well and tasted great! I'll make this again.

Less sour cream and cheese needed and got more flavor from adding some Penzey's ranch dip and dressing mix. Used panko breadcrumbs.

Pineapple Walnut Salad

Reviewed: Dec. 29, 2012
Well this was pretty good. Didn't need the full 8 oz. of whipped topping and used pineapple tidbits and pecans as that is what I had. Will make this again as everyone from the youngest to the eldest enjoyed this!

Best Beef Dip Ever

Reviewed: Dec. 16, 2012
Used mix of low sodium beef broth, low sodium soy sauce, worcestershire to taste instead of water. All else same. Broth was strained before using. Bread was spread lightly with butter, broiled, then parmesan, shredded beef, mozzarella, then broiled open faced again. My family was drinking the broth it was so good! Sandwiches all gone as fast as I made them! Broth and leftover beef will be the base for beef and noodles next day. Best dip sandwich ever.
