Slow Cooker Ham

4 hours on low was enough time. 1 cup brown sugar was enough sweetness. Great easy recipe that produces a moist ham.

I agree with others - this does not need all the butter. I used 4 tbsp and next time will use even less. The chili is a nice touch! Pretty good recipe!

Tender Chicken Nuggets

Great! Used panko breadcrumbs with added parsley, garlic, salt, pepper. Mixed milk in with the whole egg. Sprayed top of nuggets with nonstick spray before the trip to the oven. Even good cold later on.

Lemon Pound Cake

Not very pound cake-y, but a keeper. I did use 1/4 c. lemon juice to sub in for some of the milk as others suggested. And I did use a white cake mix as that's all I had. Will try the lemon cake mix next time. Also, used a lemon glaze on top.

Red Bean Salad with Feta and Peppers

Not everyone will eat this, but I found it a great salad. Had to sub cilantro for parsley; pigeon peas for kidney beans; white onions for green. And tripled the dressing.

Italian Sausage Soup with Tortellini

Used most of the listed ingredients, subbing others for what I did not have on hand. What a great basic recipe for us! Did not use the red wine and made my beef broth from scratch. Definitely worth making many times and ingredients can be adjusted for what is on hand.

Too Much Chocolate Cake

Not the best, but certainly a great change from just using a cake mix. Used greek yogurt as sub for sour cream; only 1/2 cup oil; only 1 cup chocolate chips. Cooked a bit longer at 335 instead of 350. Chocolate glaze on top with some sprinkles. Even better the next day.

Tuna Patty Sandwiches

Wow! Doctored this up a bit with more mustard, some dill and lemon juice, pepper and salt. Great when cooked with a bit of olive oil on stovetop. No need for bread to make a sandwich.
