Mom's Best Peanut Brittle

My first time making peanut brittle, and I was rather leery. My worries were for nothing as this recipe turned out beautifully. In fact, my husband said it tasted just like his mother's! Seemed like it took forever to get up to 240 degrees but after that the temp went up rather rapidly. The parchment paper on the cookie sheet, heating in the over, worked great. Only problem I had was the parchment moving around as I rotated the pan to distribute the brittle.
