Peanut Butter Balls III

How do I love these treats? Let me count the ways! First off I will tell you, I am not a huge peanut butter fan...don't hate it, just don't love it. I needed something that seemed fairly simple yet round and "candyish" for the holidays. The holidays passed and I never got them made but a few weeks later, I decided since I had all the ingredients on hand, I would give them a go. #1 (as I am counting the ways I love them)they are EASY to make. At first when I was rolling them into balls by hand they (my hands) started to get more and more gooey. I fixed that problem by keeping my hands dusted with powdered sugar. #2 They LOOK nice and could easily be dressed up even more with sprinkles etc. #3 They TASTE out of this world....I'm serious, they are SO creamy on the inside they taste worthy of the name "truffle". It is not normal for me to get a hankerin for anything peanut buttery but I seriously got hungry for these! Just to get them away from me, I gave the last dozen or so to my dear friend and told her where to find the recipe. A week or so later I spoke with her and she had already made them...TWICE! (she didn't exactly thank me for showing her this new vice!) BEWARE...your greatest dieting weakness will be replaced with these new wonders....before making, consider carefully if you want to do this to yourself and others! AWWWWWW..... GO FOR IT!!!!! You'll thank yourself. Between'll thank yourself! ;D

Avocado, Tomato and Mango Salsa

I had some over ripe mangos given to me so instead of eating them as is, I decided to look up a recipe. Made this up just before some friends came over and they really loved it. I did too. Very, very tasty.

Billy's Favorite Smoky Collard Greens

There are rare moments for the daughter of a great cook when her mother tries something she's made, has seconds and demands the recipe....these greens provided me with one of those rare moments. I will say that Momma did suggest one thing that took it over the edge...after she had her first bite she said, "These need some butter! I always butter my greens." Momma IS always right....try it yourself! I almost forgot...I didn't have molasses so I simply left it out since other reviewers had stated they thought it a bit too sweet....but I myself am rarely offended by extra sweetness....I also doubled the garlic. I used fresh garlic and diced it pretty small.

Apple Breakfast Bread

Ok! So I have tried the bread....LOVELY and if I cannot improve the texture be any more moist, I am STILL keeping it and making it a constant in this home. Am going to try to try some of the other reviewers ideas for moistness but this bread in no way is a disappointment. FABULOUS new family fall tradition.

Sweet Restaurant Slaw

Eagerly, I sat down at my computer to pull this recipe up. I had made it a week or so ago and after serving it at dinner to my Mom and Dad, Mom brought me a head of cabbage so I would make some up for them. With horror, I realized I had not saved it to my recipe box! Nearly had a heart attack trying to find it! When I did find it the first thing I did was click the "add to recipe box" tab and only THEN could I breathe with relief! Whew! It is wonderful! The only changes I made personally was to use a whole onion per bag of slaw mix rather than the 2 tablespoons called for...(in this family you can't get enough onion) and I used celery seed instead of poppy seed. My nephew declared it wasn't "LIKE" KFC, it WAS KFC slaw! My only slaw recipe from now on...making it for a friends b-day party where I will no doubt have a few recipe cards with this recipe on it to hand out to everyone that wants it....this is your recipe folks!

Restaurant-Style Zuppa Toscana

This was a winner! I had a friend give me a couple bunches of kale and I didn't know a thing about what one does with it. Now I know. One makes Zuppa Toscana for a meal with friends and basks in the glow of their praises for the evening. I did not have the sausage called for so I uses polish sausage and it was wonderful. I didn't measure the kale, just doubled the entire recipe for enough liquid to cook all my kale. I also shredded my potatoes in a thick hashbrown/like cut beause I have a Salad master machine that does that for me in a jiffy and I didn't even have to peel the potatoes. I used 4-5 fresh garlic cloves instead of the powder....I think that's all the modifying I did. A keeper for sure....and I love the name.....makes me feel like I'm morphing into a bonified "foodie". ;D

Fluffy Pancakes

Got great reviews when I made this for company. One person said they hadn't had pancakes this good in years! I didn't have white vinegar on hand...used red wine vinegar. Worked great.

Chicken Breasts Pierre

Why am I leaving a review on a recipe with so many reviews, when nobody will probably get to read it? Because it was THAT good! SO divine I couldn't stop eating it. Put it on top of a chicken broccoli flavored rice and paired it with a salad smothered in an imitation Olive Garden dressing. The tastes together in your mouth were unbelievable. Am definitely going to have this when Pastor and family come over next!

Jambalaya Casserole

My Dear Fellow Cooks ~ TRY THIS RECIPE!!!!!! I may never have attempted it myself were it not for a friend who was looking at my list of saved recipes and commented on it. I remembered that I had the smoked sausage in my freezer and decided that I had enough of the other ingrediants to give it a hardy "go". (we were both hungry) Because I did not have them on hand, I had to leave out the green onion and the parsley. I did not have long grain brown rice so I substituted it with instant brown rice and adjusted the cooking time to approx. 20 minutes...the instructions say to cook until the rice is done and that still goes when using instant rice. I had to use two cans of diced tomatoes which I did not drain and as I only had one stick of real butter I filled the rest in with margarine. Actually forgot the salt and pepper and did not miss it a BIT which is surprising as I am a salt hound! For the hot pepper sauce I used Louisiana hot sauce. This was so tastey and so different from the flavor of things I typically cook! I AM keeping this one for good and am planning on serving this at the next community meal for which I cook. Now you KNOW you ONLY cook what you're sure will turn out and make you look good when you're cooking for a crowd so I think that's the highest praise I can give it. As far as the spice goes, my six year old AND my 16 month old ate it with no trouble. It's easily adjusted to your individual taste but if you don't like things too spicey, it's not.

Kathy's Award Winning Barbeque Sauce

I cook for a community dinner every other month and the first month that we cooked I had someone else buy the bbq sauce and it was a hideous disaster! This time, I was determined to redeem myself! After reading the reviews, I decided this was the one to try! After getting all the ingrediants together in the pot (substituting the molases with a mixture of molasses, brown sugar, kayro syrup and maple syrup because of necessity) I dipped my finger in just to test it and was so pleasnatly surprised! I feel confident that this will be the redemption for which I seek! Very yummy even before the simmer. I decided not to shortcut with the powder forms of onion and garlic...used fresh. I am anxious to report back to ya'll after the dinner. Stay tuned in for the next saga! FANTASTIC! I will NEVER EVER EVER buy BBQ sauce from the store again...the BEST I have EVER tasted....going to use it for my neice's graduation party but may cut the cayanne pepper for the weaklings! lol SO FABULOUS!!!!! Restaurant worthy. As in, if I ever open a restaurant, this will be one of the items of legendarey taste on the menu. Maybe even what it's known for! HOOOOAHHHH!!! Thank yoiu KATHY! You make me look doggone great!

Chocolate Chip Walnut Pie

Oh my, oh my! When I found out that my dinner guest was going to be delayed, I decided that I would try to find a QUICK pie to fix, knowing chocolate pie was his favorite. When I came across this recipe, I decided to go for it as I happened to have all the ingrediants called for. I almost thought it was a mistake when it called for the ingrediants to be put into an already baked pie crust and baked again, but it's not. It got RAVE reviews, and is simple as, well, pie! I suggest that you try this recipe AS IS before fooling with TRULY beggs for some rum extract, I think, but a FABULOUS and impressive pie all on it's own. Am making three for a funeral dinner tomorrow. P.S. If you have brown sugar, use it. This is the one of few recipes I've made that I really believe would be noteably downgraded by a substitute. FABULOUS. This is going to be one of my new favorites to make and take. One you can really be proud of.
