I found this recipe by pure fluke and put it aside, making a mental note to make these for a friend's birthday. He grew up eating these and gets them very rarely now that no one in his family remembers how to make them. I brought them to his birthday party and he and his family were thrilled! His sister insisted I send her the recipe and his dad was so happy and said they tasted just like the ones he ate while growing up in Portugal. Thank-you for such a wonderful, authentic recipe!

Magic Cookie Bars from EAGLE BRAND®

My whole family loves these bars! This recipe has been around for over 20 years and it's a favourite Christmas treat. I never met a man who didn't love these. A couple things I do to make the process easier: while the oven preheats pop the pan in with the butter to melt it, the other is use a spatula to press it down because it's much more efficient than a fork. Oh and one last thing! The amounts of chocolate chips, coconut and nuts can vary. Use as much or as little as you like! :)

Love the Mama Lemon Bars

I've never made lemon bars before but they're one of my favourite desserts. The first time I made these they were delicious but too thin (I had used a 9x13" pan). But the second time I used a square pan. Instantly doubled the thickness. I also doubled the lemon juice (and added a touch extra lemon zest) for a more tart bar. Wonderful recipe for first timers! :)

Challah I

I made this recipe exactly as directed. It was my first time making challah and I was making it for Rosh Hashanah at my hubby's cousin's place. I'm not Jewish and was not sure if it would be authentic but everyone there thought it was perfect! Someone had brought a store-made challah but no one ate it - mine was ripped to shreds and devoured very quickly. I was praised up and down for this challah and told that it had a very authentic taste and texture. Definitely recommend this recipe - especially for first-timers and gentiles wanting to impress the in-laws. :)

Shrimp Scampi Bake

Soooooo yummy! I didn't have any lemon juice so I used white wine. Perfect! Served on top of spaghetti noodles and topped with a sprinkling of parmesan. Definitely a keeper - even my picky hubby and toddler liked it!

Whipped Shortbread Cookies

Rosemary Ranch Chicken Kabobs

These are great! First time I made them I had all the ingredients and they were exactly what we wanted (I omitted the sugar). But the next time I made them, I was out of Worcestershire sauce, lemon juice and rosemary. I subbed in soya sauce, orange juice and herbs de provence, respectively. They were even better!! These have become a summer family favourite. Excellent starter recipe. :)

Pizza Pasta

The first time I made it I followed the recipe exactly and it was wonderful! My hubby loved it. The second time I made it I subbed my homemade sauce for the jarred sauce and it wasn't nearly as good. Go figure! So now I always buy a jar of premade sauce and it's a family favourite! Thanks for this one, it's a keeper. :)

Maple Walnut Muffins

These are my new favourite breakfast muffins! I use very dark maple syrup which really brings out the maple flavour without being too sweet. Delicious! We're keeping this recipe. :)
