Double Quick Dinner Rolls

Have to give this 5 stars for the easiest rolls ever, even though I screwed up making them. I added 2 1/2 cups of flour by accident, thought my yeast was bad because it wasn't proofing, and put too much garlic powder in them, also dried onion, not powder. However they amazed me they are really good for such a speedy roll. My dough was not as sticky as other reviewers was (maybe because of the extra flour) and I was able to sort of roll them before I put them in the muffin tin. They also rose really well, and in the time indicated. Also, I only had bread flour so I don't know if that made a difference or not. For my oven 15 mins was right on. No burning at all. I have to remember what I did wrong next time so I can do it again, lol.

The Greatest Grilled Turkey

This turkey was at least as good as fried, better than anything from the oven, and easy as can be! I brined the turkey overnight like I always do. Thanksgiving day I just put it on the grill with a pan underneath the grate to catch drippings. I added celery, apples and onions to some chicken stock in the pan. The best gravy ever! Freed up the oven for all the side dishes. My husband and kids loved it! I'll never bother with any other method again. This is a keeper you must try!

Sauteed Apples

Coconut Shrimp I

Excellent and so incredibly easy to make! My family told me to throw out all other shrimp recipes. Watch the temp on the oil so they won't burn. For an easy dipping sauce I mix horseradish with strawberry preserves like a local restaurant does in Florida. At least as good as any restaurant's coconut shrimp. Thanks Linda!!

Sweet 'n' Spicy Roasted Corn

Everyone goes crazy for this corn! Like others, I just grill the corn without the husks. I also usually cut it off the cob and stir it into the sauce. Once I added way too much brown sugar and everyone loved it so I do it like that now every time. Make sure to have at least 2 ears of corn per person. People really over eat this. I have to make it tonight for the friends who always request it. It's really good so I don't mind!

Walnut Raisin Scones

These are wonderful! I followed the advice of others and added the juice of the lemon to the buttermilk and used all the lemon zest of 1 lemon. I was afraid to knead, but don't be! The kneading makes them look nice and smooth, and they are not at all tough. I brought them to a friend from Scotland who gave them 2 thumbs up, and that's something!

Portuguese Sweet Bread I

For bread taste and quality I would give this five stars, but I too had trouble with the quantity in my 2lb bread machine. The first time I made it it cooked into the top. The next time I made it I reduced the portions from 12 to 8, and it was better, but still almost too much. Make sure to use the light setting. The crust is beautiful and flaky, almost like a croissant. Delicious!

Amish Bread

I have made several good breads from this site. My husband survives on bread, and this is his favorite. I just used the regular 2 lb setting on my machine ( I use the timer and make it overnight so it's ready in the morning) and it came out perfectly. The setting is for 4 hours, and I'm not sure if all machines take that long. I was so confused about the measurements at first I went on Wikipedia, 18 T = 1 Cup + 2 T, as several people mentioned. I appreciate how simple the ingredients are! Nothing special is needed, and the bread is great!

Beef Tenderloin With Roasted Shallots

This made for a very wonderful family reunion dinner. I was on the fence about the sauce, but others said it was great. The sauce is a lot or work, but I did follow others suggestions and made a few things in advance. The meat preparation was outstanding. It was perfect.

Baked Apricot Chicken

This is a really good easy recipe that the kids will love. It makes a nice sauce that is good with rice. I had to use mango jam because that's what I had, and it was great. I think it would be easy to change it around a bit and still get a nice dinner. Would be very easy to make for a large group.

Grilled Buffalo Wings

We love wings at our house and these were out of this world. The disposable pan is a must. I could have tripled the recipe and there still wouldn't have been leftovers. You won't believe how good these are until you try them. Not as spicy as some may want, but good for the general gathering.

Crispy Orange Beef

This was really good. My soy sauce was really salty, so next time I will omit the added salt. I froze the beef partially and it was very easy to slice. GIGI's idea about the collander to shake off excess corn starch was perfect. For those who's beef was not crispy, the secret is small batches and hot oil. I also doubled the sauce since I stir fried lots of vegetables to go with this, and tossed them with the beef and the sauce. Next time I will remember to also double the garlic and ginger if I'm doubling sauce.To cut down on prep, I used Trader Joe's frozen microwavable jasmine rice that is always great. I think that made it so much easier in the long run.

Giant Chocolate Chip Cookie

I make all the cakes for office birthdays and some people just like cookies better. This was Fantastic! I found a 16" pizza pan at Wal-mart and that was perfect. This is also great for a kid's party, and it travels really well. I have also used an oatmeal butterscotch cookie and it worked out fine. People are so amazed and it's so much easier than making cookies. Try it! I wish everyone at work wanted a big cookie!!

PHILADELPHIA Key Lime Cheesecake

This was fabulous! I used bottled key lime juice and regular lime zest. I also always put cheesecake in a water bath with the spring form pan wrapped tightly in several layers of foil. This was gone in seconds at a family gathering. People who love key lime loved it, and people who hate key lime loved it. Can't go wrong with this recipe. If you want more lime flavor you can add a bit more juice. It will be fine.

Hot Mustard Pretzel Dip

Fantastic recipe! Requested often for parties. I sometimes add raspberry jam for a different taste. If this is too hot for kids, just mix it 1/2 dip & 1/2 Mayo.
