Fried Sweet Potatoes

Whole Wheat Banana Nut Bread

Great consistency and moist without being sticky, but pretty bland. I'd recommend adding the banana last and barely mixing it into the batter, as well as adding some spices. Will definitely make again with a few changes.

Mayo-Free Tuna Sandwich Filling

We were out of mayo, but wanted tuna salad for sandwiches - after trying this recipe, I will NEVER use mayo again in my tuna salad! The only changes I made (completely out of necessity because we were missing some ingredients) were using white onion instead of red, basil instead of rosemary and celery instead of peppers. I also had some capers on hand that I threw in. We served it on 12 grain bread, open-face with a slice of tomato and cheddar, melted in the toaster. Thanks so much for this healthy, filling and tasty recipe!

E-Z Drop Biscuits

I was also pleasantly surprised by this simple recipe! I wanted a quick and easy biscuit that didn't take long to bake, as I usually use the recipe from 'The Joy of Cooking' and it takes a bit longer to bake. I did however cut in my fat, skipped the cream of tartar, and decreased the sugar a bit. Using a tablespoon to drop, this recipe yielded 24 biscuits.

Easy Broccoli Quiche

This was very light. It took longer than 30 minutes to bake, and for the last 20 I upped the temp to 375. I added about 1/2 cup less cheese. The recipe also made more egg mix than the pie crust would fit. I will probably use 1/2 cup less milk next time.
