Cardamom Rose Meringues

The flavor is out-of-this-world amazing! However, I had trouble keeping my meringues from browning. I lowered the temp to 225 and still they got toastier than I like. Hence the 4 stars.

Potato Latkes I

I used about 2/3 of a bag of Trader Joe's shredded potatoes, 2 eggs, 2 Tbs flour, and a dash of salt, omitting the onion. I also cooked them in a deep fryer set at 350 for about 3-4 minutes per side. Served with homemade applesauce from this site, they were perfect!

Chicken Pot Pie IX

I omitted the celery and added some chopped parsnip, turnip and rutabaga, and sautéed mushrooms with the onions, and it turned out awesome! I like how flexible this pot pie is veggie-wise.

Pumpkin Gingerbread

I made this exactly according to the recipe and it turned out awesome. I then added homemade pumpkin cream cheese icing to the warm-from-the-oven slices and there aren't words to describe the deliciousness. Pumpkin cream cheese icing: one 7oz container of Trader Joe's pumpkin cream cheese (seasonal), 1/4c butter (softened), 1c confectioners sugar, 1/2 tsp vanilla, mix until delicious.

Best Fried Green Tomatoes

AMAZING. When the cajun restaurant down the street shut down, I nearly cried because I loved their fried green tomatoes. These are even better! I cut the salt back to about a teaspoon, and sliced the tomatoes about 1/4", but kept everything else the same. My husband was over the moon!

Bread Machine Focaccia

My husband doesn't like rosemary so I substituted Italian Seasoning (blend of dried herbs). I also used regular flour plus 3 Tbs of gluten in lieu of bread flour. Before baking, I brushed the top with olive oil and sprinkled with parmesan and kosher salt. Delicious! Especially dipped in oil and balsamic!

Eggless Milkless Butterless Cake

Easy Broccoli Quiche

It definitely has to cook longer than 30 minutes. 50 seemed to do the trick nicely. I've made this a couple of times, first sticking to the recipe (with a 4-star review) and then making the changes that give it 5-stars in my book: 3/4C sharp cheddar instead of mozzarella, 1/2 onion instead of a whole, and saute some pancetta/bacon in with the onion and broccoli.

Balsamic Roasted Pork Loin

So good! I didn't have any specific "steak rub," so I used some Kona coffee rub that is particularly good on pork. It turned out AMAZING. My husband and I were dipping our bread in the balsamic goodness...I think the leftovers (there wasn't much leftover) will become pork sandwiches. Definitely a winner!!

Spicy Rapid Roast Chicken

Awesome! I had a 5lb bird, so after the 20 minute stint at 450 I roasted it at 400 for about 55 minutes to get to temperature. I also slipped some minced garlic under the skin of the breast and stuck half an onion in the cavity. Will definitely be making this one again!

Roast Leg of Lamb

I made this in the crockpot and it came out AMAZING. I coated the (5.5lb) lamb in the seasonings, then put it in the crockpot with enough water to cover about 3/4 of the way up the side of the roast. I set it on low for about 6 hours and it was delicious! Well-seasoned, juicy and super tender. A huge hit!

Awesome Slow Cooker Pot Roast

Freakishly good. I used Trader Joe's cream of portobello mushroom soup (one box) and my roast was about 2.5lbs instead of 5. Other than that, I followed the recipe exactly. It was perfect.
