Incredible recipe! I've tried many dough recipes and have never been as satisfied as I am with this one. Made it exactly and was thrilled with the ease of rolling it out - it was smooth as silk and didn't fight me at all. Got it about 18" in diameter and my pan is about 15, so I cut strips of cheese and rolled it into the excess for a stuffed crust! BTW I sprinkled semolina in the pan generously, really added to the nice chew. When I make it again (maybe right now!) my only adjustment will be to up the salt by a pinch. Thanks for providing this winner!
