Scalloped Carrots
I loved this. I didn't follow the recipe exactly, and used carrots and a sweet potato, but the method is great! Definitely a keeper...

Eggplant Parmesan II
This is a 10 star recipe. Not only did my husband and I LOVE it like crazy, but neither one of us got indigestion or got sick at night. Italian food, especially heavy ones like fried eggplant, tended to to that to us. But not this time! This is how I layered everything: sauce, eggplant, cheeses, prosciutto...My husband loves my cooking anyway, but he said he's rarely had better eggplant parm in a restaurant. He just could not stop raving! I sweated the eggplant with sea salt...that helped a lot in flavor.
