Flourless Chocolate Cake I

I made it sugar free and low carb 4 g per slice I used baking cocoa in place of chocolate bars - I followed directions on cocoa box as substitute for chocolate bars Mine said 1 tbs cocoa 2 tsp oil 3 tsp sugar - = 1 oz baking chocolate . I replaced all sugar in recipe including cocoa conversion with stevia. I used 16 Tbs dark cocoa total each tbs is 2 grams carbs - next time I would use a little less as its very dark! Lol - I can't believe how great this turned out! I'm doing Atkins 40 and this fits in perfectly!! Also I used silicone cake pan sprayed with Pam after overnight refrigeration it popped right out! No hot water etc - I used baking cocoa because it has less carbs than chips - Great low carb treat!!!

Oatmeal Raisin Cookies I

I used regular oatmeal the first time and they were flat -this time I used old fashioned rolled oats like the recipe states and they were great! I cut sugar to 1/2 c each - mixed by hand no mixer!! Tip - if you soak raisins you will need extra flour because your adding moisture !! Yes they would go flat ?!

Pumpkin Swirl Bread

I got lucky after Christmas and scored a 29 oz can sweet potatoe pie filling for 40 cents! I made this bread with it and it was delish!!I doubled recipe- I cut sugar down because sugar was in filling and omitted 1/3 c water - because my canned filling was a bit watery. So moist!! Glad I found this recipe! I didn't know what the heck I was going to do with that can! You can't buy a soda for 40 cents!

Eggless Peanut Butter Cookies

Very good...good consistancey... I added 1 tsp vanilla! I'm missing some peanut butter flavor- l love peanut butter - I think I can do 1/2 shortening and 1 1/2 c peanut butter for more flavor

Easy!! First time I made it was Christmas morning I made mixed berry filling. I'm making one now with peach apricot filling . However both times I just made one big one - fits on a cookie sheet NP! Bake a little longer. If you made 3 they would be small. One large one is great for family brunch. I also used almond paste crumb topping yum!

Chocolate Turtles® Cheesecake I

I used 2- 8 inch silicone pans I made turtle brownie in one and cheesecake in the other so I used brownie as bottom instead of crust - I use the silicone so I can freeze cheesecake pop it out and flip it over so I don't care if cheesecake cracks I'm flipping it over anyway! I did filling for 24 servings to have taller cake

Easy recipe! Did one batch on silpat - then followed another reviews advice w/ cupcake pan - that didn't work at all!! Paper would not come off and they baked weird! Added orange oil and filled w/ stabilized orange whipped cream awesome!

Potato Pancakes I

Easy and fast! I add dried chives and make homemade apple sauce for two - 2 apples 2 tbs water cover , microwave 4 minutes mash em up ( stick blender- not too much I like it chunky) add sugar or splenda and spices to taste. Put in freezer to cool down fast - Use 1 apple per person - the best pancakes w/ homemade apple sauce!!

Roasted Red Pepper-Cheese Spread

Wow! Great tastes like pimento spread! I bought my favorite store brand and something is wrong with it - spoiled?I spent $6.99!! I didn't have pimentos but I did have peppers! I thought what the heck? Its great!! I don't think I'm spending $6.99 again I'll make it myself! I used light mayo! And I ate it right away! So good! Much cheaper! Thanks Kathie!

Impossible Pumpkin Pie II

I happen to have a block of cream cheese in the fridge so I threw it in - I used brown sugar only and added 2 tbs molasses . I did a crumb topping on top for the last 20 min - very good! It had a slight cheesecake texture - very tasty! Next time I'm going to add 3 - 8oz cream cheese and extra cup white sugar - I mixed everything in blender which was great!

Easiest Focaccia Recipe

Love it! I have made this a lot of times! I have mixed in olives, tomatoes,cheese,artichokes,garlic etc - its a basic recipe you can add many things too! Get creative! Also flavored olive oils work well too! I use garlic and lemon - extra seasoning salt is a plus! If you have an olive bar at your grocery store grab a handful of marinated items chop em up and throw them in (don't rinse) for Mediterranean focaccia - add bit of extra flour if you do yum!

Strawberry Rhubarb Custard Pie

I have made this recipe many times - I should've reviewed it a long time ago! Just like my gram used to make! I love it - I throw in a tablespoon granulated tapioca to thicken a little more and ad tsp vanilla to filling - also sub heavy cream for milk ( personal preference) I sometimes make galette w/ it which works fine as well -see pic I have won quite a few pie baking contests and have just qualified for state championship -if I say its great ...its great! Should've reviewed a long time ago! Also I am partial to most of chef johns recipes! Keep em coming!Great country style pie -not too many frills let's the fruit shine! Top w/ real whipped cream if you can

All-Day Apple Butter

Great! Adjusted spices to my liking - left some peels in with apples - hint! Peel contains pectin which will thicken butter naturally - used stick blender after finished cooking - smooth as silk! Also sub some brown sugar fnstead of all white for richer flavor

Apple Crisp II

Very bland? I don't get the great reviews?? Needs some salt and vanilla - I used unsalted butter ? I added apple pie spice and twice as much cinnamon tg!! idk what the baking soda and powder were for? didn't rise? Next time I would toss w/ lemon juice , add salt , vanilla and skip soda and powder - and add some pecans!

Did not chill dough - turned out great! I nuked chilled butter for 40 sec - it was melted but not 100 % liquid mixed everything by hand with whisk no need for mixer!

My Amish Friend's Caramel Corn

Love recipe just as it is!!! I have used real butter, molasses, mixed fancy nuts, mixed candied nuts ( burned) etc etc - the best way to make it is just the way it is written! But! I do love to melt some ghiradelli chocolate and drizzle it on top! Put in freezer after to harden quicker .... to eat faster! I use aluminum turkey roaster pan did not like paper bag thing. I use 3- 3.5 oz bags microwave popcorn

Brooke's Best Bombshell Brownies

I was missing 1/2 c butter sub vegetable oil ..missing 1 egg sub 1/4 soda 1/4 powder...and I only had cheap cocoa...usually i like special dark and sub almond kisses for chocolate chips...with all the sub's they were still wonderful! Will make again as instructed next time! YUM
