Chewy Chocolate Chip Oatmeal Cookies

Santa (aka my husband) requested oatmeal chocolate chip cookies this year. He absolutely raved about these. I took some to my sister in law's on Christmas Day and she and her daughter both loved them as well. They were a little salty to me but that may have been my fault. I measured over the bowl and I think I got a bit too much. Otherwise I followed the recipe exactly. My husband demanded I save this recipe so j will definitely be making these again :)

Sarah's Applesauce

This was good but too sweet for me as written. Very easy to put together and totally worth it to have fresh applesauce. Great way to use up apples as well. I liked it a lot more the second time I made it. That time, I used brown sugar instead of white, less cinnamon, and apple cider instead of water. This is one of those recipes where I think it's really necessary to tweak for your personal preferences. Thank you for a great starting point!

Hot Apple Cider

This was good and I really liked the idea of it but it wasn't perfect for me. My husband really enjoyed it and that's why I'm giving it 4 stars. I followed the recipe exactly except that I could not find whole allspice and had to substitute ground. I think I ended up using 1/2 teaspoon. This smelled wonderful while it was cooking, but the end result was a little too tart for me. I would probably make this again but make an effort to add some more sweetness.

Maple Apple Crisp

Really good. I followed the recipe exactly except that I used ground almonds and walnuts instead of oats (didn't have any). For this reason my topping didn't get very crunchy but it was still delicious. The maple syrup was a nice addition. This was sinfully good with vanilla ice cream! I would certainly make this again and make it a point to have oats on hand :)

Strawberry Pie II

Love this pie! My husband requested a strawberry pie for Thanksgiving and found this recipe. It was a snap to put together and set up beautifully. I followed the recipe exactly except I didn't make the whipped cream. I also used a graham cracker crust. This tasted so good, just like fresh strawberries. I will definitely make this again.

Easy Honey Mustard Mozzarella Chicken

I thought this was fabulous! Super easy to prepare and full of flavor. The chicken was very tender and moist. I followed the recipe as written except that I used pre-cooked bacon strips (I love these and use these in place of raw bacon for everything as they crisp up wonderfully with very little effort). Also, the recipe didn't specify to mix the honey and mustard together but I did. I cooked it in an 8x8 glass pan and it came out perfectly. The sauce was rather thin. I would like to thicken it up next time and serve extra over the chicken and maybe with rice. My husband's only complaint was that it was "too mustardy", so next time I think I will use Dijon instead of yellow mustard and/or increase the honey. I look forward to making this again!

Fluffy French Toast

Good recipe! The mix of flavors in the batter is perfect. My husband absolutely loves this. The only thing I do differently is use butter instead of oil. I do think for 12 slices of bread you would need to increase the batter ingredients. I usually make between 7 and 10 and find myself cutting it close.

World's Best Pasta Sauce!

I love this sauce recipe; it is my go-to for pasta. I have made it many times and it always comes out great. I usually follow it as written except that I use a full pound of both beef and sausage. I made it a few days ago and subbed red wine for the water, brown sugar for the white, and cooked it in the crockpot for 6 hours on low heat. It was wonderful! Be forewarned that this is a very thick and hearty sauce. If you prefer a mild marinara this is not the recipe for you :)

Creamy Potato Lasagna

This tasted pretty good but I don't think the end result was worth the extensive prep. I may try making again and see if I can sneak a few shortcuts in. I like the idea of using frozen hashbrowns or something similar as one reviewer mentioned. I would also like a bit stronger flavors and more seasoning. Maybe onions, garlic, bacon, a sharper cheese? This is a recipe that I really like the idea of but needs some tweaks to make it 5 stars.

Caramelized Spicy Pumpkin Seeds

These are utterly fabulous! They are more sweet than spicy but I found it to be a perfect balance. I used butter and brown sugar for caramelizing rather than olive oil and white sugar. It just sounded better to me. I agree with a previous reviewer who mentioned that these taste like caramel kettle corn. I think these will become a Halloween tradition in my house :)

Roasted Pumpkin Seeds

This recipe works perfectly for us. The seeds come out wonderfully crisp and full of flavor. I do like to dry my seeds overnight before roasting as they seem to get crispier. Use as much salt as you like (my husband likes a lot). Extra fine popcorn salt seems to stick the best. Thanks for the recipe!

Swiss Chicken Casserole I

Great, easy dinner. My husband requested this because he loves stuffing (I used chicken Stove Top, his favorite). This was a cinch to put together and came out well; hubby raved about it. I personally found the chicken a bit bland (although the sauce/stuffing mixture was terrific) which is why I rated it 4 stars. I would actually like to make this again into more of a casserole with the chicken cut up and everything mixed together. I think that would make it 5 stars for me.

Hamburger Steak with Onions and Gravy

My husband and I enjoyed this. It would definitely be best with mashed potatoes (be sure to double your gravy!) I followed the recipe exactly and had a little trouble with the gravy. I used very lean hamburger and didn't have enough drippings. I ended up adding a few tablespoons of butter to start my gravy. It still came out nicely but I may omit the sherry next time. I didn't care too much for that flavor. Overall it was good and satisfying. I would make this again.

Slow Cooker Chicken and Dumplings

Really, really good. I was very impressed with how good this turned out to be, considering how easy it is! I made a few minor changes: seasoned the chicken with salt and pepper, used 1/2 an onion, used chicken broth instead of water, and used one can of biscuits. I used Pillsbury Grands, which I normally like but wouldn't recommend for this recipe. They didn't cook as thoroughly as I would have liked (and I put them in 1 hour prior to serving). Cooking time was right on. The chicken was so tender it shredded with very little effort. The end result tastes like you slaved in the kitchen for hours :) Loved it and would definitely make again.

Sauteed Apples

These are my favorite kinds of recipes, the ones that are so simple but so full of flavor. I absolutely loved these and so did my son. We ate them as is but definitely want to try with ice cream and over French toast. I think this would make a really decadent pie/apple crisp filling as well. The recipe is good as written and I also found a splash of rum makes it even tastier :) Two thumbs up!

Almond Streusel-Cherry Cheesecake Bars

This turned out to be a great Christmas Day dessert. Easy to make and very flavorful. The only thing I wasn't crazy about was the "streusel" crust and topping. I would make this again but just do a graham cracker crust and skip the cookie topping. Maybe an extra can of cherries too :)

Pretzel Salad

This went over great at a family dinner. Very easy to put together and very tasty. I got a little lazy while crushing up the pretzels so ended up with a sort of chunky crust that had an odd texture. I would be more thorough next time :) I think using fresh fruit instead of frozen and omitting the Jello would make this even better.

Slow Cooker Beef Stroganoff I

I liked this recipe but I found the cook time to be way off. I believe I ended up cooking it for around 6 hours on low and that was plenty of time. At that point it was starting to get too thick. I followed the recipe with the exceptions of substituting beef broth for water and adding a splash of red wine. The flavor was good and I think I would make this again; just keep an eye on it!

Lemon Pepper Chicken and Gravy

This wasn't exactly bad, but it was definitely not what I was expecting. The sauce didn't really thicken for me which was disappointing, and it seemed a little bland. I served this over rice and the end result looked and tasted very much like Chinese food. And don't get me wrong, I love Chinese food but for some reason that's not what I was expecting from this. I might try this again but there would definitely be some changes involved.

Quick Quiche

I though this was pretty good although my husband questioned it a bit :) Very quick and easy to make. I did use mild cheddar because that's what i had, but i think the Swiss it called for would have been better. It came out a bit too moist in the middle, which was the only thing I didn't really care for. I would make this again but I would cook it a bit longer or use less milk to help firm it up. I like that this is easily adaptable to your tastes and what you have on hand (like swapping cheeses and meats, adding veggies, etc). Overall a good recipe, just needs a few tweaks for me.
