We had some family come to visit from Winnipeg, Mannitoba so I dug out my Mennonite waffle recipe with strawberry sauce....Yum! There were 10 of us so I made the recipe x 3 and we ate every one!
I asked AR about the recipe format on the blogs coming out all weird ...&nb&nb...they say they are working on it and it should be good in a couple of weeks.....so, hopefully you can still read the recipe.
These are best made in a Belgium Waffle Maker....the deeper kind but I have made the thinner ones also.
Mennonite Waffles-makes 5 Belgium Waffles--if doubling, tripling etc..increase all ingredients...I know it sounds like a lot of BP but you need it.
1 2/3 cup AP flour
4 tsp Baking Powder
1/2 tsp salt
1/ 2/3 cups milk (if I have cream, I'll sub in 1/4 cup)
6 Tbsp Canola oil
Mix the dry well
Whip the wet
Combine well....I use my stand mixer
Pour 3/4-1 cup batter into sprayed waffle iron...done when steam slows down.
4-5 cups frozen strawberries
1 cup confection sugar or more to taste
4 Tbsp unsalted butter
1 tsp vanilla
bring all to a simmer until soft,
use hand blender to blend into a sauce...could use your blender.
Great cold over ice cream also.
