GIVE THEM FOOD...and other ways to cope with life

It seems like my life has been an endless experiment to rid myself of unwanted fat!  I just read the Pritikin Longevity book, The Edge and have decided to give it a go. The stubborn pounds of menopause refuse to leave their very comfortable home around my middle!!   For the last few years I have successfully brought my weight down through educating myself on Vegetarian cooking.  This plan seems to have the roots of Veganism with a little chicken and fish thrown in to keep the family happy.

I modified and cooked up my bean soup recipe to follow the Pritikin rules...it was wonderful, and all done in one pot!

BEAN SOUP

Into a soup pot put 1 or 2 TBSP of olive oil

Add:  2 stalks of celery chopped
          1 med onion chopped
          4 garlic cloves chopped
          1 cup of frozen corn
          1 bay leaf
          1 TBSP ground coriander
          1 TBSP chili powder
          1 1/2 tsp ground cumin
          1 TBSP Worcestershire sauce

Let onion soften a little
          
Add:  1  15 oz can diced Fire Roasted Tomatoes...can use regular if can't find
           1  8oz (small) tin tomato sauce
           1 quart vegetable stock
           2 cans beans....black, northern or combo  RINSED

Cook until celery is tender
Add ground pepper.

Make yourself up some JIFFY corn bread using skim milk and egg white and serve a slice on top of the soup!    Add a salad and...  Enjoy!

TIP FOR MAKING SALAD WITH ROMAINE:

Keep the root end of lettuce on and slice the whole head vertically ...then chop horizontally...so easy to get small pieces. Rinse and put through your spinner!
