It seems like my life has been an endless experiment to rid myself of unwanted fat! I just read the Pritikin Longevity book, The Edge and have decided to give it a go. The stubborn pounds of menopause refuse to leave their very comfortable home around my middle!! For the last few years I have successfully brought my weight down through educating myself on Vegetarian cooking. This plan seems to have the roots of Veganism with a little chicken and fish thrown in to keep the family happy.
I modified and cooked up my bean soup recipe to follow the Pritikin rules...it was wonderful, and all done in one pot!
Into a soup pot put 1 or 2 TBSP of olive oil
Add: 2 stalks of celery chopped
1 med onion chopped
4 garlic cloves chopped
1 cup of frozen corn
1 bay leaf
