Good Morning!  I'm preparing to teach a class based on Julia Childs wonderful French recipes.

Here's a tip on Eggplant :    Is it a boy or a girl??    When choosing eggplant look for the male eggplant, it has a longer look and it's marking on the bottom is circular.  Females have more seeds and therefore can be more bitter.  Females have a rounder look and their marking is more like a dash.
True story!

when I was teaching myself to cook way back in college, I made these wonderful oatmeal raisin cookies for my roomies....only problem was I forgot the flour! The cookies became one big mass that overflowed the cookie sheet and made a huge mess in the oven!
