Easy and Quick Swiss Steak

Reviewed: May 23, 2009
I've tried one other recipe for cubed steak and it came out kinda tough, so I was worried. The only thing I did differently was I added a sprinkle of meat tenderizer to the steaks before I dredged them in the flour. My hubby and kids all loved it- extremely tender and a good flavor!

Artichoke Stuffed Mushrooms

Reviewed: Jun. 22, 2009
These tasted wonderful! Warning though: with cleaning off the caps, all the chopping, and brushing the caps with melted butter, the prep takes awhile.

Apple Raisin French Toast Strata

Reviewed: Jun. 22, 2009
This was delicious! I took another reviewer's advice and spread the cinnamon bread with cream cheese before cubing. You couldn't really taste it. Next time, I'll skip this step. I also changed the cook temp to 350, but it still took 40min.

Country Breakfast Casserole

Reviewed: Jun. 22, 2009
This was a hit with everyone! I used turkey sausage and replaced some of the eggs with egg whites- no one could tell. I also used thawed, shredded hash browns O'Brien instead of the toast and upped the cook temp to 350.

Playgroup Granola Bars

Reviewed: Jun. 22, 2009
These were not as good as I had hoped, but maybe I did something wrong. I replaced the oil with 1c. applesauce. The bars were very soft, more like a cookie. Also, I'll leave out the wheat germ next time as it gave it a funky texture that no one cared for.

Congealed Chicken Salad

Reviewed: Jun. 22, 2009
Maybe I was expecting too much, but this didn't blow me away. Also, my hubby thought it was bland.

World's Best Bacon Cheese Dip

Reviewed: Jun. 30, 2009
OMG! This dip was amazing! I followed some other review suggestions and only used 1/3c. lite mayo. I also used 6oz. swiss cheese, 1/4c. grated parmesan cheese, and threw in some garlic powder for good measure. My twin boys had 3 friends over, between the 5 of them and my hubby, it was gone in seconds and they were begging me to make more! This was EXCELLENT!

Slow Cooker Pulled Pork

Reviewed: Jul. 8, 2009
Great flavor! Make sure to use your fave BBQ sauce. It did take a while to shred the pork, but it was definitely worth it!

Sliced Tomatoes with Fresh Herb Dressing

Reviewed: Aug. 9, 2009
This is an excellent way to use fresh tomatoes. One note- they're not as good the second day out of the fridge...a bit soggy. Also, I used dried herbs instead (make sure to turn the tablespoons into teaspoons) but I'm sure its even better with fresh. Just don't make more than you think you'll eat- room temp is the way to go for serving.

Special Deviled Eggs

Reviewed: Aug. 9, 2009
My hubby thought these were great, but I guess you have to be a fan of horseradish (which I'm not) to really enjoy these.

Jamie's Cranberry Spinach Salad

Reviewed: Aug. 9, 2009
I've already made this recipe 4 times in the past two weeks! The dressing perfectly pulls this salad together. I either toast sliced almonds or pine nuts to put in and I've added crumbled gorgonzola cheese as well. The tiny amount (if any) that's been leftover gets soggy and wilted, but I shamelessly ate it up anyway- still delish! This was great because I made the dressing up the day before and let the flavors join overnight. The rest is super quick to throw together last minute.

Red Skinned Potato Salad

Reviewed: Aug. 9, 2009
This is the best potato salad recipe I've tried so far. I did add a dollop of sour cream, and I used half garlic salt and half regular salt. I haven't tried it with cheese added yet, but I think it will make this dish even better (if possible!)

Red, White and Blue Slaw Salad

Reviewed: Aug. 9, 2009
I made this as a side to go with the slow cooker buffalo chicken sandwich recipe on this site. My hubby and bro completely inhaled this! I may try this with gorgonzola and see how it goes over (for peeps who don't like blue cheese). I took other reviewer's advice and used Kraft coleslaw dressing. Super easy to throw together ahead of time! I'll be making this again and again!

I love the fact that this recipe uses frozen chicken breasts. Just throw it all in together and forget it! The chicken was super tender and very easy to shred. The flavor was outstanding!
