Chicken with Mushrooms, Prosciutto, and Cream Sauce

Reviewed: Jan. 23, 2014
This was really good, but I think mine suffered a bit because I didn't use a high quality prosciutto. I'll definitely try this again though.

Just can't do it- they're still brussel sprouts.

Peanut Butter Bars I

Reviewed: Sep. 24, 2013
Flippin' ridiculous good- pardon my French! Like buckeyes, but so much easier than dipping each ball. I did lesson the butter slightly, and I used milk chocolate chips, because that's what I had on hand.

Caramelized Chicken Wings

Reviewed: Feb. 26, 2013
The flavor is wonderful- reminds me of Thai food. The only thing I would suggest is some heat- a little red pepper flakes or cayenne- just to compliment the peanut butter sweetness. I've already made this several times. Sometimes I just broil chicken breasts and do the sauce separately. I add a bit of cornstarch to the water and bring it to a boil, then pour it over my chicken breasts.

Restaurant-Style Tequila Lime Chicken

Reviewed: Jan. 29, 2013
Everyone loved this! I made the marinade exactly, though I did the ranch/salsa combo for the topping sauce. I broiled mine because its dark and chilly around dinnertime right now and I'm not going to freeze over my gas grill with a flashlight. I am excited to try this on the outdoor grill though. I'll definitely make this again!

Kalamata Olive Tapenade

Reviewed: Jan. 29, 2013
This was excellent and super easy. The texture turned out perfect for me, not runny or soupy. I added the olive/caper/garlic ingredients to mini processor and pulsed a few times. Oh- I also added some jarred roasted red pepper for added color. Anyway, I poured the lemon juice and olive oil over the chopped ingredients and stirred. I think adding those beforehand would have made it like an applesauce texture. I will definitely make this again!

Charley's Slow Cooker Mexican Style Meat

Reviewed: Jan. 20, 2013
Oh my gosh! I made this recipe using a 4lb pork roast and it was amazing! I didn't brown it, I just threw it right into the crockpot. I combined all the other ingredients in a bowl, then poured it over the pork. I left it on low for 10hrs. It took me literally one minute to shred all of it- I just pressed on it with my fork and it fell apart. I then dumped all the shredded pork and all the liquid into a large pot and cooked it on medium/high until all the liquid was evaporated...about 20min, making sure to stir occasionally. We made pork soft tacos with freshly made pico de gallo and guacamole. My whole family gave it rave reviews and I keep getting into the leftover pork to eat it straight from the bowl! Yum!

Breaded Parmesan Ranch Chicken

Reviewed: Jan. 15, 2013
Great taste, but I wish there was a way to keep the 'breading' on the bottom side of the chicken from getting soggy... I used Ritz crackers and pounded my chicken so it would bake evenly.

Italian Sausage Appetizer Bread

Reviewed: Nov. 17, 2012
This was great! I omitted the olives but only because I didn't have any. I also used garlic powder as opposed to minced and Shredded Italian cheese in place of the Swiss. I think this would be even better as individual sausage breadsticks.

Alabama Pulled Pig

Reviewed: Nov. 13, 2012
I made this in my slow cooker using an 8lb. bone-in shouler picnic roast. I brushed the roast with browning sauce first, then added about a teaspoon of liquid smoke to the sauce. Poured it all over the top and cooked on low for about 8 hrs. It was amazing! No additional sauce needed!

Excellent! I added the taco seasoning to the hamburger, then combined the meat, salsa and cream cheese. Topped with Velveeta slices and baked at 350 until the cheese was melted and bubbly. It was gone in one day!
