Yellow Squash Casserole

Absolutely delicious! Here are the changes I made: I didn't have any onion, so I just used onion powder. I used a blend of italian cheeses and seasoned bread crumbs in place of cheddar and crackers. I used Jane's Crazy salt in place of salt & pepper. Everyone loved it!

Beef Pot Roast

Really good! Changes: Rubbed a mixture of salt, Jane's Crazy Mixed Up Salt, Fresh ground pepper, Garlic powder + Montreal steak seasoning into meat before searing in extra virgin olive oil. Used 3 bay leaves and 3 crushed garlic cloves. Before adding the garlic + onion to stoneware roasting pan, I cooked them on low in the remaining drippings from dutch oven. This was an important step, I think. Then, I added 2 T worchestershire sauce + 2 C beef buillon to the meat/ onion/ garlic/ bay leaf mixture. Really yummy!

Red Beans and Rice

This was AWESOME! Here are the changes I made: 1) Used 1 T unsalted butter & 1 T evoo 2) Omitted onion & used whole bell pepper diced finely. 3) 3 cans of beans instead of 1 (next time I will try using a whole bag of dried beans which would be equivalent to 4 cans beans. It would stretch it & make it a more thrifty meal in general.) 4) added 8 oz can No Salt Added Tomato sauce 5) Used the "onion, celery, pepper" version of diced tomatoes. This was even better the 2nd day after mixing in the rice & letting it sit in the refrigerator overnight. Will definitely make again, thank you! =)

Simple Mexican Rice

Really really delicious! Both my husband AND my toddler loved this. I used: Olive oil instead of vegetable. Only 1/4 red onion instead of whole. 1 cloves fresh minced garlic Only used 1 tsp cumin instead of 1 tbs Added 1/2 tsp salt, per other reviewers Jasmine rice "Better Than Bullion" chicken broth Hunt's Basil/ Garlic/ Oregano paste

Egg Salad I

I doubled the mayo, halved the Dijon mustard, and omitted the onion and salt. It was delicious! I served it on toasted honey wheat bread as an open faced sandwich. I'll definitely make this again.

Whipped Cream Biscuits

Like other reviewers, I needed to add a little bit more whipping cream to achieve the proper consistency. I used regular whipping cream (not heavy) and they were great. I had to use a little bit of whole milk in one batch because I ran out of whipping cream, and they were fine. Easy, delicious, and husband approved. What more can you ask for?

Delicious Grilled Hamburgers

I used regular ground beef (not lean) and substituted the oil with 1 egg per 1.5 pounds of meat. Instead of using liquid smoke, I used a cajun "cowboy" spice - about 3/4 tsp per 1.5 pounds of meat. I used my George Foreman to cook them. They turned out great!

Zesty Slow Cooker Chicken Barbecue

This was delicious! The only change I made was that I left out the brown sugar. Instead, I used Jack Daniels Brown Sugar bbq sauce. It was very flavorful! I served with baked sweet potatoes on the side.

Broccoli Cheese Soup V

This is a great recipe! I used a red onion, land o lakes butter spread, jane's krazy mixed up salt instead of white pepper, and I also substituted 2 14.5 oz cans of Campbell's Cheddar Cheese soup in place of the processed cheese. For the chicken broth I used some regular and some reduced sodium. My 14 month old daughter and husband both loved it!

BUSH'S® Best Black Bean Soup

This is a fantastic recipe! It reminds me of the black bean soup they serve at Panera Bread. I doubled the recipe, which I would recommend doing if you are serving more than 3 people, just to be sure you have enough. I followed the recipe pretty much exactly. I used Bush's brand beans - 1 regular, 1 low sodium, and 2 seasoned. I rinsed off the beans from the 2 cans that I ran through the food processor, which I think helped to make it not too salty. Whatever you do, do not add any salt or else this could easily become too salty. I like a more uniform texture to my soup, so I added the salsa to the beans in the food processor. With cornbread, this is a complete meal. We didn't add sour cream or cheese and it was still great - although those would definitely add another great dimension. Will be making this again! :)

The salsa just gave this a weird flavor. Next time I will try using canned, diced tomatoes with the chili seasoning already in them. Way too much cumin & chili powder for my tastes.

Salmon with Brown Sugar Glaze

This recipe is delicious! I decided to bake instead of broil - 375 degrees for 30-40 minutes worked well. I doubled the sauce recipe and it gave it a good amount of flavor. I also made cuts into the Salmon so that the sauce/ glaze could flavor the inside of the meat. I served it with Jasmine rice & mixed vegetables and it was a delicious meal!
