Pineapple Upside-Down Cake VII

Fabulous! I used a yellow cake mix, 3/4 c pineapple juice from can, 1/4 c rum, 1/4 c water, 3 eggs, and half a stick of butter to make the cake batter. Next time I'll try pineapple chunks, as the rings didn't cut well for attractive serving. May add pecans or walnuts to the butter , sugar, and pineapple layer.

Butter Pound Cake

I substituted butter flavored extract for the lemon as my husband requested a "buttery pound cake". It was a big hit! We have a family of four and it was gone within 24 hours!

Russian Cabbage Borscht

Wow! This was fabulous! We all agreed that it was just as good as the Czech restaurant we go to. Next time I will be making a double recipe. My family of four ate all but 1 cup of it for dinner tonight (the recipe says it makes 8 servings) and we are all want the small bit of leftovers for tomorrows lunch. Maybe well each get 2 spoonfuls?

Burgundy Pork Tenderloin

Loved it! I wanted enough for lots of leftovers, so I used a 4.25 lb. boneless pork loin roast. I doubled the amount of pepper and garlic powder, but left the salt at 1/2 a tsp. I put the meat (cut in 2 pieces to fit)on a trivet in the crockpot and topped with 1/2 and onion and 2 stalks chopped celery and 1 pkg of fresh sliced mushrooms. I mixed the packet of brown gravy mix and the 2 cups of burgundy wine together and poured it over everything. I cooked it on High for 5 hours (160 on the meat thermometer). Just before serving, I ladled the sauce into a pan and thickened on the stovetop using Wondra flour (about 1 TBSP?) to make gravy. I served it over mashed potatoes and with green beans. It was wonderful! Next time, I may also put baby carrots on the bottom of the crock pot under the trivet. You know the meals a hit when the kids are asking if they can eat the leftovers for breakfast!

Apple and Spice Pork Roast

Fabulous! I followed another person's advice and put the whole thing in the crockpot with all the sauce. Then I made a second recipe of sauce to serve with the meal. I served it with mashed potatoes and Spiced red cabbage with apples. Everyone was fighting over the leftovers. I'll definitely make this again!

Savory Pork Roast

Easy and delicious! I cooked it in a Reynold's cooking bag. I served it over rice and used some of the flavorful broth from the cooking bag to moisten the rice. Great with green beans. The leftovers were fantastic hot or cold!

Marbled Almond Roca

I made this recipe twice today. This first time, I followed the directions exactly, cooking it over medium heat and stirring occasionally after add the water and corn syrup. Sadly, it scorched and didn't taste very good. The next batch, I tried it over medium low heat, stirring slowly and continuously, stopping only to check the temperature. Success! Delicious! So the 4 stars is for faulty directions, not for flavor. The scorched stuff isn't as awful as it could be. My neighbor said it wasn't stopping her from eating the first batch. But the not burned batch was incredible, and very easy to make! I'll definitely make this one again!

Curried Butternut Squash and Pear Soup

Made this using left over steamed butternut squash from Thanksgiving. I did make some minor changes. I used Better Than Bullion chicken stock (and left out the 1 tsp salt), as I had no reduced sodium chicken broth. I also skipped the 1/2 cup 1/2 and 1/2 and garnish each serving with a tsp of light sour cream. This got tons of raves. The kids had seconds and people were fighting over the leftovers!

Christmas Tree Cookies

I never have very good luck with cut out cookie. Mine always taste like cardboard. These, however, were fantastic! I'm not a big fan of sugar cookies, but I couldn't stop eating these! The only change I made was substituting lemon extract for the almond. We will definitely be making these again!

Squash and Apple Bake

Super delicious! I sprayed my pan before putting in the squash and apples and clan up was a breeze. I only used 1/4 c. brown sugar and 1/2 tsp. salt. I had no mace so used 1/8 tsp nutmeg and 3/8 tsp all spice instead. I served it with 12 boneless skinless chicken tenders I had sauteed on the stove top with 1 clove of garlic. Made a fantastic meal. Everyone went back for seconds and my high schooler packed herself the leftovers for lunch!

Slow Cooker Fruit, Nuts, and Spice Oatmeal

Good flavor! I added 1/2 tsp salt, as oatmeal can sometimes taste rather flat without it. I used 1/4 cup orange juice to replace 1/4 a cup of the water. Next time I'd add 1/2 a cup more liquid, as that might prevent the burning around the edges. I also sprayed my crock as recommended. I will make this again!

These tasted great, but the dough was way too sticky. My mom has made the same recipe (minus the water) for years. Hers calls for refrigerating the dough at least an hour before baking.

Chile Garlic BBQ Salmon

Wonderful! I did double the chili sauce and use 2 tablesppons bottled lime juice instead of the juice and zest of 1 lime. Served it with rice and garlicy beets (from this site) and a green salad. My family is agruing over who gets the leftovers for lunch!

Easy Mint Chocolate Chip Ice Cream

Very refreshing! I used 1 tablespoon of the mint extract instead of the peppermint and vanilla. My husband likes his without chocolate, so we just added the chips to part of the ice cream after it was mixed in the machine, as we were pouring it into containers for the freezer.
