Roast Sticky Chicken-Rotisserie Style

Fabulous! I reduced the salt to only two tsp, one per bird and used 1/2 a sweet onion, 1/4 per bird. This was so good, my 15 year old requested I make it again the following week for Christmas dinner! UPDATE 5/3/14 - I've made this many times since my first review. Today this was a spur of the moment decision, so I didn't have time to let it sit overnight. I didn't even have 5 hours, so instead I combined it with sliced carrots and a few stalks of celery in a cooking bag. It was in the oven for 2 hours at 350 degrees. This time, however, I followed Madicakes' suggestion and added flour to the drippings on the stovetop to make gravy. The seasoning was fantastic - probably the best (and easiest) gravy I've ever made!

Black-Eyed Peas and Gumbo

First I made the rue as suggested with oil, but it burned long before the recommended 5 to 7 minutes and never thickened up. I dumped it out and tried again using unsalted butter and flour. I cooked it only about three to four minutes. Success! I also added the ham with the tomatoes and water, to shorten up the cooking time. Delicious!

Delicious! I waited to add the salt until all the ingredients were combined then tasted it, as some hams can be very salty. It was perfect as is, and didn't need the 1/2 tsp salt called for. Everybody raved and went back for seconds!

Persimmon Cookies

Fabulous! I subbed craisins for the raisins and used the 1.5 diameter cookie scoop. It made 50 cookies. All but 14 are gone before the last batch were even done baking! Delicious!

Fabulous! everybody loved it and fought over who got to take the leftovers for lunch! I used the Great Value brand roll out pie crust from Walmart. it was good, not as greasy as Pillsbury.

Mouse's Macaroni and Cheese

Very good and EASY! I didn't have the cheese listed in the recipe so substituted the same amount of Colby jack. Also used about 2.5 cups of uncooked medium shell noodles as that is what I had on hand. It was great, although I think I may have used too many breadcrumbs, as they were rather salty.

My Mom's Zucchini Bread

Delicious! I followed others suggestions and subbed 1 c. whole wheat flour for one of the cups of white flour, replaced 2 cups white sugar with 1 cup of packed brown sugar, and replaced 1/2 the oil with 1/2 cup unsweetened applesauce. This was so tasty, I made 2 batches today! the second time, I left out the nuts and replaced them with semi-sweet chocolate chips. I baked this batch as muffins. If you use an ice cream scoop to fill the liners with batter, you get 24 muffins. They were delightfully decadent! At the rate my family of 4 is eating them, I hope there will be enough for breakfast tomorrow!

I was too impatient to wait the two hour minimum for chill time, so just chilled 45 minutes, whisking about 1/2 way through. Delicious! I'll definitely be making this again!

Marrakesh Vegetable Curry

Phenomenal! This tastes delicious, is fabulously healthy, beautifully colorful, and makes your entire house smile divinely fragrant! I make it at least once a month. Plus, it makes enough to feed my family of four for two meals (and the two kids are teenagers with good appetites).

Hershey Farm Pumpkin Whoopie Pies

I used a mid size cookie scoop (1 1/3 -1 1/2 Tablespoons) filled and leveled off to get 44 whoopie pies (88 unfilled cookies) of about 2 inches. They were done perfectly in my oven at 16 minutes. I must not have used as much filling as intended, as I had about 1/4 of the recipe left over. I used it to fill part of a second batch of pies today. I didn't taste much of a maple flavor, perhaps because I used real maple syrup. Next time I'll either skip the vanilla in the filling and replace it with maple syrup, or try maple extract. These are divine filled, but also excellent unfilled, for a less sweet taste. 10/12/11- Just made a second batch. this time I replaced the 1 tsp vanilla extract in the filling with 1 tsp maple extract (in addition to the 3 tablespoons real maple syrup). Now you can taste the maple flavor, although the filling is now beige colored instead of white. Yummy!
