Caramel Macchiato Ice Cream

Fabulous! Didn't have caramel sauce, so left it out for plain coffee ice cream. I followed another's suggestion and used only 3/4 cup sugar and that was perfect. I was too impatient to wait the two hour minimum for chill time, so just chilled 45 minutes, whisking about 1/2 way through. Delicious! I'll definitely be making this again!

Marrakesh Vegetable Curry

Phenomenal! This tastes delicious, is fabulously healthy, beautifully colorful, and makes your entire house smile divinely fragrant! I make it at least once a month. Plus, it makes enough to feed my family of four for two meals (and the two kids are teenagers with good appetites).

Hershey Farm Pumpkin Whoopie Pies

I used a mid size cookie scoop (1 1/3 -1 1/2 Tablespoons) filled and leveled off to get 44 whoopie pies (88 unfilled cookies) of about 2 inches. They were done perfectly in my oven at 16 minutes. I must not have used as much filling as intended, as I had about 1/4 of the recipe left over. I used it to fill part of a second batch of pies today. I didn't taste much of a maple flavor, perhaps because I used real maple syrup. Next time I'll either skip the vanilla in the filling and replace it with maple syrup, or try maple extract. These are divine filled, but also excellent unfilled, for a less sweet taste. 10/12/11- Just made a second batch. this time I replaced the 1 tsp vanilla extract in the filling with 1 tsp maple extract (in addition to the 3 tablespoons real maple syrup). Now you can taste the maple flavor, although the filling is now beige colored instead of white. Yummy!

Janet's Rich Banana Bread

Fantastic! I ran our of white flour, so used1 cup of whole wheat to replace it. I had no sour cream, but after reading another review, substituted an equal amount of plain fat free yogurt (what I had on hand). I put the batter into muffin tins, for easy, on the go breakfasts. It made 12 very big muffins that took between 20 and 25 minutes to cook. Next time I'll make 14 muffins so I don't have as much overflow. These are amazing! Lovely banana flavor and just the right amount of sweetness!

Summer Fruit Galettes

I made just one, as didn't have enough fruit for 2. My 3 peaches came to about 3 cups. I didn't have blueberries, so substituted 1/2 cup of frozen berry mix of raspberries, blueberries, and blackberries. I added 1/2 tsp of cinnamon and used Wondra instead of all purpose flour. Tasted great with store bought roll out pie crust.

Hearty Creole Okra and Tomatoes

This was great! We had never tried okra before, but had picked up some fresh ears of corn and okra from the local produce stand. I only had 1/2 the amount of okra called for, and no sausage, but it was still delicious. In place of the sausage we just substituted left over steak from last night's dinner. I'm sure it is fantastic with the sausage, but it was really great with steak. Husband, kids, and myself all had second helpings! I'll definitely be making this again, although next time I'll plan ahead and get all the ingredients.

My Jay's Jerk Chicken

Fantastic! We eat a lot of grilled chicken at our house. Even so, my husband said this was the best marinated chicken he's ever tasted - this from a man who doesn't even like green onions! After reading previous reviews, I went with 1/2 cup low sodium soy sauce, 2 jalapeno peppers, and added 2 cloves of garlic. My family was thrilled to find there is enough for leftovers tomorrow night. I'm thinking of putting it in a green salad.

Strawberry and Feta Salad

This was okay. I used only 1/4 of the oil called for, but the dressing still felt really heavy and greasy. We have used the same salad ingredients with a raspberry or strawberry vinegarette and gotten better results with less effort.

Brooke's Best Bombshell Brownies

Delicious, but the toothpick never came out clean and the cooled brownies were rock hard. the next time i only cooked it for 45 minutes, regardless of the toothpick test, and it was great!

Ramen Cabbage Salad

I followed the recipe the first time and felt it only deserved 4 stars, as it was too oily for my family. The second time I added 1 cup shredded carrots and used only 3 Tablespoon olive oil (instead of 1/2 cup vegetable oil) and it made all the difference in the world. Next time I may try sesame oil and mandarine oranges.

Super-Simple, Super-Spicy Mongolian Beef

Great! I used 1.5 tablespoons red pepper flakes and marinated for 1.5 hours. We got a nice warmth, not enough to burn your mouth. next time i'll try marinating overnight for a little more heat. if that doesn't do it, i'll bump up the flakes to 1.75 tablespoons. I cooked the beef and marinade, removed the beef and add matchstick carrots, sliced red peppers, onions, and mushrooms to the pan. When they were cooked, i returned the meat to the pan and cooked until everything was heated through. Served it over white rice and got rave reviews! Definitely a keeper!

Sauteed Apples

I used 4 large breaburns (cored and sliced in the food processor), as that's what I had on hand. Because my apples weren't tart, I only used 1/3 cup brown sugar. This was wonderful alone, and delicious on Fluffy Pancakes (from this site). "This tastes like apple pie filling!" was one daughter's comment. I'll definately be making these again.
