Chicken Enchiladas II

Reviewed: Aug. 5, 2014
A little salty, but otherwise fast, easy, stuff I have on-hand, and everyone ate it!

Grandma's Egg Custard Pie

I use less sugar, no crust, and add-in various breads or fruits to make it more substantive - great for breakfast!

Lemon Artichoke Soup

Reviewed: Nov. 6, 2013
I added a little more lemon, lots of broccoli, chicken, and a little parmesan (little less half-and-half). Yum!

Slow Cooker Chicken Taco Soup

Reviewed: Nov. 6, 2013
Loved how easy it was. Used fresh veges and cilantro to give it tex-mex taste. Didn't have time for slow-cooker, but I'll try that next time.

Slow Cooker Mashed Potatoes

Reviewed: Nov. 6, 2013
Didn't have cream cheese so used 6oz garlic-herb Boursin instead. Tasted good but got too dry/stiff after crock pot. Next time I'd add more liquid to account for the drying that happens in crock pot.

Downeast Maine Pumpkin Bread

Reviewed: Nov. 6, 2013
I replaced some oil with applesauce, cut the sugar to 2c, and instead of 3.5c flour used 2c white flour, 1/2c whole wheat, 1/2c oats, 1/2c flaxmeal. Made muffins (18min in oven). Didn't add any choc chips or raisins but they're still good!

Basic Ham and Bean Soup

Reviewed: Apr. 3, 2013
I liked it, but I wound up adding a lot more of all the spices to give it more flavor. I also served with cottage cheese and salsa on top. Would be great with garnish of chopped fresh tomatoes and green onions as well. (I soaked beans in cold crockpot overnight with baking soda, then rinsed in the morning, added rest of ingredients, and cooked 4hrs.)

Cream Cheese Frosting II

Reviewed: Mar. 25, 2013
I may not have done it right, but mine wound up a bit too translucent and not creamy enough for my taste.

Grandma's Green Bean Casserole

Much better than the canned soup version, though I'd add a little milk so it's creamier.

Pumpkin Pancakes

Reviewed: Oct. 23, 2012
They are really odd to pour on the griddle (very heavy, viscous - you have to spread them into a circle yourself) if you're used to regular pancake batter, but they taste great when they're done!

Caramelized Spicy Pumpkin Seeds

Reviewed: Oct. 23, 2012
Ok but considering there's a lot of sugar and extra work in this recipe, I don't like them that much better than straight out of the oven with a little salt...

Pumpkin Casserole

Reviewed: Oct. 22, 2012
LOVE this recipe, but I do 1.5 times the recipe so the amounts are more even (i.e. 1 whole pumpkin, 1 can evaporated milk, etc) except I still do 1c sugar and 1/2c butter. The first time I used all-purpose flour with the extras to substitute (salt, baking powder, etc) but the next time I used self-rising flour and the texture was a little better (less runny).

Iced Pumpkin Cookies

Reviewed: Oct. 7, 2012
Easy and they do taste good, though not as fantastic as I hoped when I saw 2100 reviews! I used 1.5c whole wheat flour and 1c white flour, but otherwise followed the recipe. Ultimately, I like pumpkin chip muffins better, but as drop cookies, these seem easier.

Oatmeal Pancakes II

Reviewed: Mar. 28, 2012
Something about the flavor was a little off - can't tell if it was too much baking soda or not enough salt. Or that I subbed whole wheat flour for regular. Regardless, the syrup covered up any issues and they were a big hit. Also cook really fast, which was nice.

Easy and delicious. A little too cheesy for me, so I added some milk/sour cream, but otherwise, great!

Real Welsh Rarebit

I didn't have any beer so I used 1/4c white wine and the rest milk. Delicious! We love over toast or as a dip for veges (like fondu).

Clark's Quiche

Delicious - especially following the directions for layering. I left out the onions/mushrooms/salt/olive oil and replaced cream with 2% milk. Will do again!
