Basic Ham and Bean Soup

I liked it, but I wound up adding a lot more of all the spices to give it more flavor. I also served with cottage cheese and salsa on top. Would be great with garnish of chopped fresh tomatoes and green onions as well. (I soaked beans in cold crockpot overnight with baking soda, then rinsed in the morning, added rest of ingredients, and cooked 4hrs.)

Pumpkin Pancakes

They are really odd to pour on the griddle (very heavy, viscous - you have to spread them into a circle yourself) if you're used to regular pancake batter, but they taste great when they're done!

Pumpkin Casserole

LOVE this recipe, but I do 1.5 times the recipe so the amounts are more even (i.e. 1 whole pumpkin, 1 can evaporated milk, etc) except I still do 1c sugar and 1/2c butter. The first time I used all-purpose flour with the extras to substitute (salt, baking powder, etc) but the next time I used self-rising flour and the texture was a little better (less runny).

Iced Pumpkin Cookies

Easy and they do taste good, though not as fantastic as I hoped when I saw 2100 reviews! I used 1.5c whole wheat flour and 1c white flour, but otherwise followed the recipe. Ultimately, I like pumpkin chip muffins better, but as drop cookies, these seem easier.

Oatmeal Pancakes II

Something about the flavor was a little off - can't tell if it was too much baking soda or not enough salt. Or that I subbed whole wheat flour for regular. Regardless, the syrup covered up any issues and they were a big hit. Also cook really fast, which was nice.

Country Apple Dumplings

Amazing! I served at dinner party and they got rave reviews. I only used 1/2c butter, 1c sugar, and 1c ginger ale and they were still plenty sweet/rich. Also had a few more apple slices than crescent rolls so I just tucked the apple slices in the pan with the rest. Yummy!

Garlic Green Beans

I cooked in microwave with a little butter & garlic salt, then sprinkled on grated parmesan cheese and heated a bit more. Excellent, quick & easy!
