About this Cook
I love to eat, and at 6'10" 260lbs I do that a lot, so I had to learn how to cook. My Mom and Grandma were great cooks and taught me a lot, especially not to be afraid to try something new.
My favorite things to cook
Love to grill and love the crock pots (I have 6 of them).
My favorite family cooking traditions
I have made sure that my children were in the kitchen when they were young so they could learn to do it themselves and to teach them a recipe is just a suggestion: change it to make it your own. Sometimes you win and....
My cooking triumphs
I have submitted many recipes but I finally got published!
My cooking tragedies
Too many to remember but I know now to wear my glasses as I grab jars from the shelves (my baking soda and baking powder look a lot alike but do different things).

Dad's Breakfast Pizza
Those are interesting scrambled eggs in the picture, when I make this I do not scramble them but just break the eggs in a shallow pit pre-pressed in the crust, so they stay in a small area, and bake in the oven until they are set. Also add any other additional toppings as your tastes desire, as you would to a regular pizza.

Cheesy Eggplant Parmesan Casserole
Like it alot but if you do the salting to draw out moisture, make sure you rinse VERY WELL. Tad salty because I didn't rinse well enough. Next time I'll get it right.

Wilted Spinach and Almond Salad
I really hate it when people change the recipe, why not submit your own but I'll do that anyway. First: This was just like Mom used to make and I loved it back then too but if you fry up a few strips of bacon first, crumbled and brown some onions in that bacon fat it will be ot die for. Second: I have found that I need to reheat the dressing several times after the first pour to really wilt that spinach.
