Black Bean and Corn Quesadillas

Amazing. I think this can be changed up to your taste. I omitted olives, didn't have them Used red pepper instead of green. Added cucumber. YUMMMMMMM.

Pumpkin Black Bean Soup

definitely a keeper! i had my doubts...(pumpkin & black beans?!?) and never thought in a zillion years my husband would eat it (and he wouldn't have if i told him it included pumpkin), but we both agree, it is DEEELISH! as written, it is 5 stars, but following the suggestions of others, adding cumin, bay leaf, & corn = 6 stars! the pumpkin is very subtle. a daring recipe with a nice pay off.

EXCELLENT!!! I will never have a sloppy joe made any other way as long as i live.... well, not that i enjoy as much anyway ;) great texture, great taste... mamwich on steroids. thank you for sharing this DELISH recipe!

Donut Muffins

these were DELICIOUS!! my kids loved them (my 14 yo even declared he was making these for breakfast tomorrow himself!). I did not have mini muffin pans, so I made them into regular size muffins. To do so, I doubled the recipe & cooked at 375 for 18 min's. This made 11 muffins (I filled muffin cups 1 inch from top). They came out PERFECT. thanks for posting this recipe!

Kielbasa and Cabbage

i was craving comfort food and this recipe knocked my pregnant socks off. it's definitely a new favorite. the only thing i did differently was add cubed potatoes (I microwaved them until soft before adding to pan). this meal is not for the health conscious. i would have never made it had i not been pregnant & more indulgent, however i am SO glad i did! thanks for the recipe!

Fluffy Pancakes

i enjoy trying new & experimenting with pancake recipes. This one is one of the best. I did not make any changes. simply made with staple ingredients & the results were very light, fluffy & delicious pancakes. Even the batter was GOOD!

Oatmeal Pancakes II

these were delicious!! i made the following modifications... used whole weat flour instead of white, used apple sauce instead of veg oil & sugar, used skim mile instead of buttermilk, per another review, i added smashed bananas & cinnamin. i also added a dash of lemon juice. i also did not have a food processor, so i just whisked....loved the texture. okay, so i modified a LOT! but i think it's a great basic recipe to play around with. next time i will add flax seed. i will definitely be making these instead of bisquick from now on.

Applesauce Drop Doughnuts

scary how yummy these were! listened to another review and added apple chunks and they tasted just like apple fritters. i also used powder sugar to coat after cooking. we used to make similar dish out of rolled biscuits, but in future, will use this one instead even though it is more work....well worth it!

Slow Cooker German-Style Pork Roast with Sauerkraut and Potatoes

kraut/potatoes had a very good flavor...smelled delish all day in the crock, however the pork was a little dry and lacking. I will experiment per other reviews next time. Not counting this one out just yet, but i found that the pork does need a little sumtin, sumtin to spruce it up.

Chicken Breasts with Balsamic Vinegar and Garlic

Very good flavor...reminiscent of a filipino barbeque. Next time i will try serving over rice instead of noodles. as much as i wanted to like the breading...i agree with outher reviews, that it was probably unnecessary and maybe better without...will try skipping the flour step next time.
