No Bake Peanut Butter Pie

Delicious! I made it with a chocolate graham cracker pie crust, and I broke an Oreo into TINY crumbs, and sprinkled it all over the top. It was really more for the design, but after tasting it, I realized that it DEFINITELY needed the chocolate! Glad I chose to make it that way from the start. Definitely going to make this again! SUPER EASY!

Butternut Squash Soup II

Amazing soup! I am not allowed to have potatoes, so I subbed cauliflower for the potatoes (equal parts). It was FANTASTIC. Making it again!!

The Best Rolled Sugar Cookies

I am giving this recipe only one star, since the dough was just impossible to work with. I am now reading another reviewer's comment that they are going to make this in the winter, when the dough won't soften so quickly. Maybe I will try that. I had to add so much confectioner's sugar and then flour (as the sugar was not holding up), that I think it made cookie, just plain; it was no longer a true "Sugar cookie". Next time I will will preheat the oven after I have shaped all the cookies; I'll just stick them back into the fridge until the oven is preheated. These cookies will otherwise run, just waiting for the oven to preheat.

Spelt Flour Bread Machine Challah

Excellent Recipe! I left out the xanthan gum, since I have no clue what that is, so I didn't have it in my house. I have never made bread with olive oil, so I was a bit nervous, so I used 1/4 cup (maybe a little more) of smart balance (the actual hard butter, not the oil in the bottle. Also, the only Spelt flour that I had, was Organic Whole Spelt All Purpose Flour, so I used 4 cups of it. I put it on the WW bread cycle of my bread machine, and chose a light crust cycle. It was HEAVENLY!!! Light, and airy, YUMMM! It tasted even better than it smelled (I kept checking to see if it was ready since it smelled AMAZING)! Definitely going to make this again!
