Whipped Cardamom Sweet Potatoes

omg! So deelish! It's so simple yet the flavor is out of this world. Cardamom is expensive but well worth it! I love how I didn't have to peel the sweet potatoes too. I used some Smart balance instead of butter to save a few calories and it was AWESOME! This will be my go-to recipe for Thanksgiving and Xmas!

Toffee Bars by EAGLE BRAND®

These were FABULOUS! I made them as a gift for my secret Cupid at work. He was so excited to get a homemade treat. He ate them all right away. Couldn't get enough. Of course I saved some for myself. So delicious!!!!!

Pasta Fagioli

I have made this recipe 3 times now, each time with a different kind of bean, and each time it turns out awesome!! I recommend doubling the recipe as it doesn't make a lot. I have always used the canned tomatoes instaed of fresh; it tastes better. This time I didn't have any fresh garlic so I substituted garlic powder and added more broth. SSSo good with freshly grated parm cheese on top!! Healthy too!

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

This was the 2nd year in a row I have made this for Xmas dinner and it is soo good and flavorful. I followed recipe to the tee except instead of using cornstarch to thicken the gravy, I used a little bit of flour. Be careful when adding the flour; make sure you use a whisk and keep it moving the whole time or else you will get lumps. It tastes even better the next day. We have been enjoying the leftovers. Will make again and again!!

Roasted Brussels Sprouts

WHO KNEW?? My husband said he likedd brussel sprouts when I asked him what veggie he'd like to have for the Xmas meal. I found this recipe and read the rave reviews and I was inspired. Soooo delicious and soooo easy. I think it's the kosher salt that makes it so good (and the olive oil of course). Will make again and again. Thanks!!

O....M.....G! These are SO DECADENT and DELICIOUS!!! I can't believe they're so easy to make, too. If you buy a box of Keebler original "Club crackers" you can make 3 entire trays of these (1 sleeve per tray). They are so addictive and rich. I can sure see how they got their name!! Make excellent Xmas gifts!!

Pumpkin Pie Bars by EAGLE BRAND®

Yum!!! OMG, I can't stop eating them. I think I probably should have cooked them for 40-45 minutes, just a few min. longer. Make sure to grease the Pyrex pan even though it has a lot of butter in the crust anyway, like another reviewer suggested.

Pumpkin Chocolate Chip Muffins

Delicious & really moist, probably because of the applesause and canola oil. I love chocolate so next time I will put a bit MORE than 1 cup of chocolate chips in. It would also taste good as a loaf....would be suitable for a holiday hostess gift, too. I used 11/2 c. regular flour and 11/2 cups of whole wheat flour. Yum!!

New Potatoes with Caper Sauce

Fabulous!!!! Made with teeny tiny little potatoes, but I still cut them in half for maximum absorbsion. Next time I might add a squirt if lemon juice like someone recommended. I also like the tip to use this caper sauce on fish. Thanks for the recipe!!

Roasted Chicken Noodle Soup

Very yummy! My husband had a cold and said that he was craving some "chicken soup". I knew that I wanted to take the easy route & go buy a rotisserie chicken at the supermarket, and this recipe works well for that. The end result was a little thick, so I think next time I will cut the flour amount in half. I was nervous about adding the evaporated milk at the end but it was good. Will make again & again!!

Greek Lentil Soup (Fakes)

OMG!! It's simmering while I write this. I just tasted it and it has another 5 minutes or so to simmer. It is soooo delicious; just what I have been craving. Such rich flavor (maybe it's the Bay leaves that make it so yummy??). So easy, too. Next time I will double recipe just so I have enough for as many days as possible. I also just made the Greek Garbanzo Bean Salad and it's marinating right now. Can't wait to eat this Greek dinner!

Curried Butternut Squash and Pear Soup

This was really good!! I just used a 2 pound bag of already cut up butternut squash from Trader Joes. I used 2 Anjou pears instead of Barlett. No half and half is necessary at all. I also added a pinch of Cayenne pepper for an extra kick. YUM!!

Kiki's Borracho (Drunken) Beans

Yum! I followed another reviewer's advice and threw everything in a crockpot and cooked on low for several hours. When I came home it smelled SO GOOD! It's important to mash the beans with a potato masher; this changes the texture and taste of the dish. This can be served as a main meal...kind of like a soup. Full of flavor and fiber. The dark beer is an interesting ingredient and gives it a unique taste!

Vegan Black Bean Soup

WOW!! Awesome! I only had 3 cans of Black beans, so I pureed a can of chili beans in place of 1 can of black beans. It was so good. I recommend using frozen corn because I think they taste better than canned corn. I used Trader Joe's Cuban style roasted corn....so good! This recipe leaves a lot of room for improvisation but I don't think it needed it. I will be making this all the time now.

Creamy Caramel Flan

WOW!! I am so pleased with myself and my hubby is too! I carefully read all the other great reviews, tips and suggestions. It was my first time making a flan. Without all the other advice (read: the sugar) I probably would have been frustrated and mad. Thanks everyone. It takes a village to nail a recipe. I luv this website. Ready for my second piece now.

Red Lentil Curry

Wow! So authentic!! I totally forgot to add the garlic, and I didn't have any fresh ginger root so I used powdered ginger instead. It turned out soo tasty with so many different flavors going on! But red lentils apparently cook much faster than brown ones, so it was a bit mushy. Next time I will serve it with a plain yogurt and basmati rice to cut the heat a bit. And I will shorten the cooking time of the lentils too. I'm looking forward to doing what another reviewer did and use veg. broth to water it down into a soup for leftovers:)

Mayan Hot Chocolate

Yum! I go to Mexico often and this is authentic! I'd even suggest adding about 3 T boiling water to thin it out just a bit. A real keeper. I used Mexican cocoa instead of instant hot cocoa mix. Tastes like it could ward off a cold, too!

Turkey Bean Chili

SOO good! I used 93 percent ground turkey to keep down the fat & calories. I took others' advice & added chicken broth at the end so it wasn't so thick. I like it hot, so I added some cayenne papper. Topped with Weight Watchers shredded cheese and the cilantro really made it a meal. It has so many great veggies in it. I used 1 red pepper, 1 orange one and the zucchini. I know it will be even better when it sits overnight!! Thanks!

The Best Lemon Bars

Yum!! Really good and easy. I only had 3 medium-sized lemons on hand, and I could only squeeze out 1/2 cup of the juice. Next time I will get much bigger lemons to get more juice to make it more tart. The crust is perfect. I also put lemon zest and a dash or 2 of lemon extract which helped to increase the tartness. Really good with the sprinkled confectioners sugar on top!
