Red Lentil Curry

Reviewed: May 27, 2009
Wow! So authentic!! I totally forgot to add the garlic, and I didn't have any fresh ginger root so I used powdered ginger instead. It turned out soo tasty with so many different flavors going on! But red lentils apparently cook much faster than brown ones, so it was a bit mushy. Next time I will serve it with a plain yogurt and basmati rice to cut the heat a bit. And I will shorten the cooking time of the lentils too. I'm looking forward to doing what another reviewer did and use veg. broth to water it down into a soup for leftovers:)

Creamy Caramel Flan

Reviewed: Jun. 14, 2009
WOW!! I am so pleased with myself and my hubby is too! I carefully read all the other great reviews, tips and suggestions. It was my first time making a flan. Without all the other advice (read: the sugar) I probably would have been frustrated and mad. Thanks everyone. It takes a village to nail a recipe. I luv this website. Ready for my second piece now.

Mushroom Orzo

Reviewed: Jun. 22, 2009
This was a great way to use up a huge box of local shittake mushrooms! Very delicious. After reading the other reviews, I too made some changes. I used vegetable broth instaed of chicken broth since that's all I had on hand. Next time I will use WAY less butter or maybe evoo instead. I'd also try to make it healthier by adding more veggies. I'd also like to try adding shrimp or scallops!!

California Chicken

Reviewed: Jul. 14, 2009
Yum!!! Definitely marinate the chicken, overnite if possible, like the first reviewer suggested. And when you put chicken on the cookie sheet, cover each piece with more cilantro before topping with tomato and cheese. The avocado is the best!!

Moroccan Lentil Soup

Reviewed: Sep. 26, 2010
****Excellent! I really liked the consistency with only half of it pureed in blender and then mixed with the other non-pureed half. I also used brown lentils and just added a handful of red ones.

Curried Pumpkin Soup

Reviewed: Sep. 28, 2010
***Ummmm, this soup is pretty good, but nothing that feels like comfort food, which was what I was searching for. I didn't add sugar, but I feel this soup is too apple-y (sweet) and not pumpkin-y enough. I agree with another reviewer that there is just something missing! It's too mushy. Since Macintosh apples are already soft, I'd reccomend just pulsing it quickly in the blender rather tham emulifying it. This way, there will be a few chunks of apple left. Made as per instructionsand it's too much like baby food.

The Best Meatballs You'll Ever Have

Reviewed: Sep. 28, 2010
They're pretty good, but not at all the best meatballs I ever had. The Worchester sauce is just a weird taste in it. Sorry.

Greek Lentil Soup (Fakes)

Reviewed: Sep. 28, 2010
OMG!! It's simmering while I write this. I just tasted it and it has another 5 minutes or so to simmer. It is soooo delicious; just what I have been craving. Such rich flavor (maybe it's the Bay leaves that make it so yummy??). So easy, too. Next time I will double recipe just so I have enough for as many days as possible. I also just made the Greek Garbanzo Bean Salad and it's marinating right now. Can't wait to eat this Greek dinner!

Sonoran Tilapia

Reviewed: Oct. 3, 2010
This was delicious, but, like other reviewers suggested, DO NOT ADD MORE SALT! There is enough salt in the Creole seasoning already. I think it's more flavorful to use canned tomatoes instead of fresh, but drain them (I forgot). I served it over red Quinoa, which is a nice alternative to rice and does a good job absorbing liquid.

Pecan Pie

Reviewed: Oct. 3, 2010
Delicious and so easy too! I made mine deep dish, and I think I should have left it in the oven a bit longer; it was too mushy inside. That's why I only gave it 4 stars, but that was MY fault. Tastes great with creme freishe on top! Will make again!!

New Potatoes with Caper Sauce

Reviewed: Oct. 3, 2010
Fabulous!!!! Made with teeny tiny little potatoes, but I still cut them in half for maximum absorbsion. Next time I might add a squirt if lemon juice like someone recommended. I also like the tip to use this caper sauce on fish. Thanks for the recipe!!

Pumpkin Chocolate Chip Muffins

Reviewed: Oct. 20, 2010
Delicious & really moist, probably because of the applesause and canola oil. I love chocolate so next time I will put a bit MORE than 1 cup of chocolate chips in. It would also taste good as a loaf....would be suitable for a holiday hostess gift, too. I used 11/2 c. regular flour and 11/2 cups of whole wheat flour. Yum!!

Mayan Hot Chocolate

Reviewed: Nov. 1, 2010
Yum! I go to Mexico often and this is authentic! I'd even suggest adding about 3 T boiling water to thin it out just a bit. A real keeper. I used Mexican cocoa instead of instant hot cocoa mix. Tastes like it could ward off a cold, too!

Kiki's Borracho (Drunken) Beans

Reviewed: Nov. 1, 2010
Yum! I followed another reviewer's advice and threw everything in a crockpot and cooked on low for several hours. When I came home it smelled SO GOOD! It's important to mash the beans with a potato masher; this changes the texture and taste of the dish. This can be served as a main meal...kind of like a soup. Full of flavor and fiber. The dark beer is an interesting ingredient and gives it a unique taste!

Pumpkin Pie Bars by EAGLE BRAND®

Reviewed: Nov. 28, 2010
Yum!!! OMG, I can't stop eating them. I think I probably should have cooked them for 40-45 minutes, just a few min. longer. Make sure to grease the Pyrex pan even though it has a lot of butter in the crust anyway, like another reviewer suggested.

Popularity Cookies

Reviewed: Dec. 21, 2010
O....M.....G! These are SO DECADENT and DELICIOUS!!! I can't believe they're so easy to make, too. If you buy a box of Keebler original "Club crackers" you can make 3 entire trays of these (1 sleeve per tray). They are so addictive and rich. I can sure see how they got their name!! Make excellent Xmas gifts!!

Roasted Brussels Sprouts

Reviewed: Dec. 27, 2010
WHO KNEW?? My husband said he likedd brussel sprouts when I asked him what veggie he'd like to have for the Xmas meal. I found this recipe and read the rave reviews and I was inspired. Soooo delicious and soooo easy. I think it's the kosher salt that makes it so good (and the olive oil of course). Will make again and again. Thanks!!

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

Reviewed: Dec. 27, 2010
This was the 2nd year in a row I have made this for Xmas dinner and it is soo good and flavorful. I followed recipe to the tee except instead of using cornstarch to thicken the gravy, I used a little bit of flour. Be careful when adding the flour; make sure you use a whisk and keep it moving the whole time or else you will get lumps. It tastes even better the next day. We have been enjoying the leftovers. Will make again and again!!
