Turkey Bean Chili

Reviewed: Jan. 20, 2013
SOO good! I used 93 percent ground turkey to keep down the fat & calories. I took others' advice & added chicken broth at the end so it wasn't so thick. I like it hot, so I added some cayenne papper. Topped with Weight Watchers shredded cheese and the cilantro really made it a meal. It has so many great veggies in it. I used 1 red pepper, 1 orange one and the zucchini. I know it will be even better when it sits overnight!! Thanks!

Thai Style Shrimp

Reviewed: Dec. 2, 2012
Ok, so I read a lot of reviews before making. For the paste I added a tablespoon of toasted sesame oil to help the garlic, jalapeno & ginger stick all together. I added kale, mushrooms and about 1/4 of a yellow pepper in with the onion. I added 1 whole can of lite cocnut milk, not just a cup like the recipe calls for. The level of heat was good because I kept the seeds in the jalapeno. But there is something major missing, and I can't exactly place it, definitely a depth of flavor is lacking. I served it over jasmine rice, which is my favorite. I added curry powder, and that helped somewhat, but this is just too bland tasting for all the interesting ingreduents that went into it. I am really disappointed because I was soooo looking forward to this!!

Vegan Black Bean Soup

Reviewed: Dec. 2, 2012
WOW!! Awesome! I only had 3 cans of Black beans, so I pureed a can of chili beans in place of 1 can of black beans. It was so good. I recommend using frozen corn because I think they taste better than canned corn. I used Trader Joe's Cuban style roasted corn....so good! This recipe leaves a lot of room for improvisation but I don't think it needed it. I will be making this all the time now.

Pear and Pomegranate Salad

Reviewed: Dec. 2, 2012
I made this the day BEFORE Thanksgiving. It tasted really great served warm. I added feta cheese and pine nuts on top. I also served the dressing cold and it tasted really bland and not very special at all. So...served warm is the way to go! I used POM Pomegranite juice and got some pomegranite seeds from Trader Joes so I didn't have to seed it myself...well worth it!

Whipped Cardamom Sweet Potatoes

Reviewed: Dec. 2, 2012
omg! So deelish! It's so simple yet the flavor is out of this world. Cardamom is expensive but well worth it! I love how I didn't have to peel the sweet potatoes too. I used some Smart balance instead of butter to save a few calories and it was AWESOME! This will be my go-to recipe for Thanksgiving and Xmas!

Curried Butternut Squash and Pear Soup

Reviewed: Nov. 17, 2012
This was really good!! I just used a 2 pound bag of already cut up butternut squash from Trader Joes. I used 2 Anjou pears instead of Barlett. No half and half is necessary at all. I also added a pinch of Cayenne pepper for an extra kick. YUM!!

Roasted Chicken Noodle Soup

Reviewed: Nov. 13, 2011
Very yummy! My husband had a cold and said that he was craving some "chicken soup". I knew that I wanted to take the easy route & go buy a rotisserie chicken at the supermarket, and this recipe works well for that. The end result was a little thick, so I think next time I will cut the flour amount in half. I was nervous about adding the evaporated milk at the end but it was good. Will make again & again!!

The Best Lemon Bars

Reviewed: Apr. 17, 2011
Yum!! Really good and easy. I only had 3 medium-sized lemons on hand, and I could only squeeze out 1/2 cup of the juice. Next time I will get much bigger lemons to get more juice to make it more tart. The crust is perfect. I also put lemon zest and a dash or 2 of lemon extract which helped to increase the tartness. Really good with the sprinkled confectioners sugar on top!

Potato Leek Soup I

Reviewed: Feb. 13, 2011
Um, it's okay. I followed recipe to the tee but they taste too much like mashed potatoes to me. I kept having to add way more broth than what it called for, and everytime it sat in the fridge they kept getting thicker and thicker, so everytime we reheated it we had to add even more broth.

Pasta Fagioli

Reviewed: Dec. 27, 2010
I have made this recipe 3 times now, each time with a different kind of bean, and each time it turns out awesome!! I recommend doubling the recipe as it doesn't make a lot. I have always used the canned tomatoes instaed of fresh; it tastes better. This time I didn't have any fresh garlic so I substituted garlic powder and added more broth. SSSo good with freshly grated parm cheese on top!! Healthy too!

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

Reviewed: Dec. 27, 2010
This was the 2nd year in a row I have made this for Xmas dinner and it is soo good and flavorful. I followed recipe to the tee except instead of using cornstarch to thicken the gravy, I used a little bit of flour. Be careful when adding the flour; make sure you use a whisk and keep it moving the whole time or else you will get lumps. It tastes even better the next day. We have been enjoying the leftovers. Will make again and again!!

Roasted Brussels Sprouts

Reviewed: Dec. 27, 2010
WHO KNEW?? My husband said he likedd brussel sprouts when I asked him what veggie he'd like to have for the Xmas meal. I found this recipe and read the rave reviews and I was inspired. Soooo delicious and soooo easy. I think it's the kosher salt that makes it so good (and the olive oil of course). Will make again and again. Thanks!!

O....M.....G! These are SO DECADENT and DELICIOUS!!! I can't believe they're so easy to make, too. If you buy a box of Keebler original "Club crackers" you can make 3 entire trays of these (1 sleeve per tray). They are so addictive and rich. I can sure see how they got their name!! Make excellent Xmas gifts!!

Pumpkin Pie Bars by EAGLE BRAND®

Reviewed: Nov. 28, 2010
Yum!!! OMG, I can't stop eating them. I think I probably should have cooked them for 40-45 minutes, just a few min. longer. Make sure to grease the Pyrex pan even though it has a lot of butter in the crust anyway, like another reviewer suggested.

Kiki's Borracho (Drunken) Beans

Reviewed: Nov. 1, 2010
Yum! I followed another reviewer's advice and threw everything in a crockpot and cooked on low for several hours. When I came home it smelled SO GOOD! It's important to mash the beans with a potato masher; this changes the texture and taste of the dish. This can be served as a main meal...kind of like a soup. Full of flavor and fiber. The dark beer is an interesting ingredient and gives it a unique taste!

Mayan Hot Chocolate

Reviewed: Nov. 1, 2010
Yum! I go to Mexico often and this is authentic! I'd even suggest adding about 3 T boiling water to thin it out just a bit. A real keeper. I used Mexican cocoa instead of instant hot cocoa mix. Tastes like it could ward off a cold, too!
