Cinnamon Cookies II

I added the vanilla extract as another reviewer suggested. It was looking too dry before adding the vanilla...I would like to try it with a bit of added apple juice if moisture is needed. Also, instead of molasses I used brown sugar as a substitute since I did not have molasses. According to another Web site, 3/4 the amount of the molasses called for is the amount of brown sugar to use...so 1 1/8 tbsp. in this case. Awesome cookies and one of the easiest recipes!

Taco Lasagna

I used 1 lb. 80% lean ground beef, 1 1.25 oz. package taco seasoning, a sprinkling of minced garlic, no cayenne pepper, the 1 tbsp. chili powder, 3/4 c. water, the 18 (white) corn tortillas, a 16 oz. jar mild chunky salsa, no green onion, the 16 oz. sour cream, and 16 oz. mexican shredded cheese (was plenty of cheese). i made it this way to keep the cost low and/or use things already in my cupboards...turned out great and healthy with less meat/cheese.

Perfect Apple Pie

i haven't made the pie yet, but the crust is KILLER! best crust i've made...better than the 'pie crust IV' recipe from this website...using it for a pumpkin pie i've made.

Delicious Ham and Potato Soup

This soup turned out great! I didn't measure the potatoes, and probably used more than 3 1/2 cups, which led me to use more like 8 tbsp of flour than 5 (or that could've been necessary b/c I used soy milk rather than cow's milk). I used about a cup of onion but it was very finely chopped. I added a sprinkling of dill on top before stirring it to serve, and I tossed in a couple tbsp of chives, too. Great! My 2 and 3 year olds love it, I love it, and my 8 year old neighbor kid loves it.

Cooky Cookies

I had to add more oil (about 1/4 cup) and 1/2 cup of water before the fun stuff...tasty dough but a little dry, especially for what was to come...I added (unmeasured) corn flakes, small marshmallows, red hots, mini m&m's, a lot of oatmeal, honey...and that may have been all. Amazing!

Old Fashioned Potato Salad

Steam the potatoes and get them extra soft. Add a lot more mayonaise than the recipe calls for...eyeball it, and otherwise as is, and delicious!

Chicken Alfredo Pizza

I've made it exactly as prescribed and with changes, too. One change I made the most recent time was rather than chicken, I used sausage. I still used the alfredo sauce, but perhaps combine the alfredo and marinara or use only marinara when using sausage. I also have added chopped tomatoes on top, and on top of that, one half - shredded cheddar jack cheese, the other half - shredded romano cheese. Biggest factor of this pizza turning out is getting the dough made correctly concerning the yeast activating sufficiently, kneeding the dough, & the dough rising. If the dough is good, forming a crust is easy. I use a 9x13 pan or slightly larger.

Portobello Burgers with Goat Cheese

The balsamic vinegar was too strong. Used onion kaiser buns - great choice. Love goat cheese and portabellas, but would rather eat plain than in this recipe.

Didn't care for it according to the recipe. If I make it again, I would double everything except the potatoes and make sure the potatoes are cubed to be very tiny.

Beef or Chicken Enchiladas

I used 1 lb. of shredded chuck roast divided evenly among 12 tortillas. I also used 1.25 cups of each cheese suggested. I would've made it without the green onions. Also, I set aside some sauce for the topping, then mixed the meat with the sauce and filled each tortilla only one time over.

Marshmallow Graham Dessert

I substituted the pineapple with the equivalent of rhubarb. I cubed the rhubarb into very small pieces (the size of crushed pineapple pieces); I add 4 tbsp of sugar and let the rhubarb absorb it in the fridge for a day or two. Then I cook the rhubarb to soften it. I allow it to cool then mix it with the whipped whipping cream as the original recipe asks for. Next time I make it I will add more butter so that the crust has more butter within it for sticking together once chilled. The mixture was a great consistency following the recipe as is.
