Cinnamon Cookies II
I added the vanilla extract as another reviewer suggested. It was looking too dry before adding the vanilla...I would like to try it with a bit of added apple juice if moisture is needed. Also, instead of molasses I used brown sugar as a substitute since I did not have molasses. According to another Web site, 3/4 the amount of the molasses called for is the amount of brown sugar to 1 1/8 tbsp. in this case. Awesome cookies and one of the easiest recipes!

Taco Lasagna
I used 1 lb. 80% lean ground beef, 1 1.25 oz. package taco seasoning, a sprinkling of minced garlic, no cayenne pepper, the 1 tbsp. chili powder, 3/4 c. water, the 18 (white) corn tortillas, a 16 oz. jar mild chunky salsa, no green onion, the 16 oz. sour cream, and 16 oz. mexican shredded cheese (was plenty of cheese). i made it this way to keep the cost low and/or use things already in my cupboards...turned out great and healthy with less meat/cheese.

Delicious Ham and Potato Soup
This soup turned out great! I didn't measure the potatoes, and probably used more than 3 1/2 cups, which led me to use more like 8 tbsp of flour than 5 (or that could've been necessary b/c I used soy milk rather than cow's milk). I used about a cup of onion but it was very finely chopped. I added a sprinkling of dill on top before stirring it to serve, and I tossed in a couple tbsp of chives, too. Great! My 2 and 3 year olds love it, I love it, and my 8 year old neighbor kid loves it.
