With Father's Day coming up this weekend, and with not only Daddy, but both grandfathers needing meaningful gifts but not wanting us to buy them a thing, every year we fall back on the homemade baked goods as a present.  Honestly, they love it more than if we had gone all out and spent a lot… MORE

Ahhh, summer time.  That time of year when kids all over the country go nuts with the sheer giddiness of not having to go to school.  Well, except for all of the autistic kids, who still wake up at 5:30 am expecting a hearty breakfast, planning to go through the morning routine, and end up… MORE

I don't know where you live, but here in Alabama it's practically summer.  The weekly lawn maintenance has started back up, as has having to wash the car a lot more often as the dusty roads cake it with a filmy layer of brown.  The upside is all of the picnicking we can now do! … MORE

It's almost too late but not quite.  There's still time if you hurry.  I suggest taking off work early, getting home before the kids out of school, and opening a bottle of wine to enjoy with the radio playing too loudly while you whip up homemade Easter treats for your food-sensitive… MORE

I am not a fashionista.  The fact that I work in a correctional facility means that most days I try to look professional and mostly put together, but if we get chemical restraint (ie, mace) on our clothes we do not get reimbursed for the now-ruined clothing, so I tend to wear inexpensive… MORE

Wow...I'm still reeling from the fact that I made a casserole and my daughter actually ate it.  We won't discuss me catching my husband licking the empty baking dish.I took corn tortillas (check the labels) and cut them into thumb-sized strips and wedges.  This was only so I didn't… MORE

Here we go again.  Another holiday.  Believe it or not I really do love holidays, but there's always I tiny bit more stress whenever there is a family member with special needs.  Will she have enough to eat?  Will she have a meltdown in the middle of the family get-together… MORE

I just got back from a glorious weekend getaway with two of my friends.  We've been training for months to run the Rock n Roll Mardi Gras Marathon in New Orleans and it was awesome.  Sadly, due to childcare issues and necessary time off from work, I didn't really get to experience the… MORE

Ever vigilant about my daughter's diet, especially now that she's on the gluten-free and casein-free diet for autism, I learned early on to sneak different foods into her.  Whether it's disguising carrots in mashed potatoes or hiding microscopic slivers of spinach in spaghetti sauce, we do… MORE

My daughter Carly began taking Ritalin a few weeks ago to help with her hyperactivity.  For those of you new to this blog she is autistic and has been taking Risperdal for almost a year for bipolar disorder, as well.  So far we are cautiously optimistic about both of these… MORE

About Me
My name is Mercy and I am a mother of two daughters. We live in Alabama where I work as a school teacher. I often feel like a short-order cook: my husband eats very little carbs, my younger daughter is on the GFCF diet for autism, and the four of us are athletes who are very health-conscious eaters. That often means that cooking dinner means four different plates of food!
My favorite things to cook
I have to admit we eat very plainly, mostly to accommodate the different "diets" we subsist on. A cooked and mildly seasoned protein, a steamed vegetable, and a healthy carb side dish are typical. I'm trying to branch out into recipes more, especially ones that I can make ahead since I work outside the home.
My favorite family cooking traditions
I love to include my daughters in the cooking as much as I can, but their young ages make it difficult at times. It's often really tempting to send them off to play while I make dinner because the job will get done faster.
My cooking triumphs
I'm proudest of "tweaking" recipes to make them much healthier and to make them fit into the GFCF diet that my daughter has to follow.
My cooking tragedies
My husband has been sworn to secrecy on the time I learned about the crucial difference between all-purpose flour and self-rising flour. They were called skeet biscuits. I will not say any more.
