Taco Bake

This was.. eh. Tasted like a boxed meal to me (and we don't eat boxed meals at our house). Used an 8 oz. can of tomato sauce plus a 14 oz can of diced tomatoes. Also added frozen corn when I cooked the pasta. It was fine, and we ate it, but nothing I'd rave about.

Black Friday Pie

I did this (pretty much) last year, and am looking forward to doing it again this afternoon. My recipe is a little different, and may help the reviewer that mentioned she'd have liked the potatoes to be a little crustier. I put the stuffing in the bottom for the crust, and then did the potatoes on top (sort of like a Shepherd's Pie). Also, all of our green beans always get eaten (I use the Green Beans and Cherry Tomatoes recipe here), so I usually throw in a bag of frozen mixed veggies. It's all a great combo!

Herbed Potato Soup

This was okay. Not fabulous, not bad, but nothing thrilling. I had about 3.5 cups of cooking water, just to cover my diced potatoes (they were a little large), and I still had to add extra milk to thin it (coming to 2 cups total). I also skipped the rosemary, and instead went with garlic. We topped it with a little monterrey jack and some chives, and ate it as a meal with saltine crackers. I typically make my own potato soup, but I was low on ingredients and time, so I searched until I found a recipe that fit what I had. For what it was-- a basic, simple soup recipe-- it was not bad, but I think a little doctoring could add a lot of much-needed flavor! Oh, and after tasting the roux, I was really afraid that it was going to have the gravy flavor that other reviewers mentioned, but I'm happy to say that it did not!

Tiramisu Layer Cake

I made this for my husband's birthday, and he loved it. I made my own white cake, instead of using a boxed mix (we don't do packaged stuff), and had to make my own mascarpone because I couldn't find any in my area. The results were great, though. Even over the next few days, as it got soggier and soggier in the refrigerator, it just got better and better! ;)

Ranch Dressing II

I was soooo excited to be able to make ranch from scratch (I don't know that I even thought it was possible). I followed this recipe to a T, but was entirely overwhelmed by the dill flavor. If you like dill, then this is great, but it didn't taste anything like the "ranch" that I expected. Next time, I'll omit it completely, and then add it little by little to taste....

Absolutely Fabulous Greek/House Dressing

The flavor was great! I tend to just eyeball the spices, but it always turns out fabulously. It's a little too sour for my vinegar hating husband, but I couldn't get enough of it! My only complaint is that after reading the author saying "it doesn't need to be refrigerated," I figured it would be relatively stable. I scaled down the recipe for 20 servings, but needless to say, had a lot left-- and, unfortunately, after a week, it started getting cloudy and rancid. It was a shame to pour that much expensive olive oil down the drain. I'll make this again, but maybe scale down the recipe to 5 or 10 servings next time!!

Grandma's Chocolate Pudding

This was soooo good. Like SHANESMOMMY, I used the whole can of evaporated milk and adjusted the water to suit, but I didn't have any of the other problems with texture that some people had. I've made it a handful of times now, and I like it best after upping the cocoa-- no specific amount, just more for flavor. As for serving, we've got a great chocolate mint plant growing in the garden, and a few leaves of that, stirred in at the end of cooking, make for a fabulous flavor. We also really liked it over angel food cake with sliced strawberries on top!

Cheesy Creamed Spinach

This was AWESOME. I love any type of spinach already, but after eating dinner at Ruth's Chris, I was inspired to try to make my own creamed spinach. I cut the butter in half because it seemed like a LOT. I didn't measure out the cream or cheese, but I am almost positive I didn't use the full amount. Also, I only had mozzarella, so that's what I used. And all in all, this was FABULOUS. I felt totally guilty eating so much (and even sticking my finger in the pan several times), but it was goooood.

Green Beans with Cherry Tomatoes

Ok, so I skipped the sugar. I didn't really measure anything, either, so my proportions could have been a little off. No fresh basil, so I used dried. Think I used quite a bit more seasoning than was called for, actually. But, these were THE BEST GREEN BEANS EVER. I made them for Easter dinner, along with a few other new recipes, and I assumed the from-scratch potatoes au gratin would be the winner, but I was wrong. These green beans were the hit of the meal with EVERYONE. My brother-in-law, who would willingly go his whole life without eating another vegetable, took a small spoonful of these to be polite. A few minutes into dinner, he tasted the beans and started raving. "If all vegetables tasted like this, I would eat them every night," and, "If you're ever coming over and want to know if you need to bring anything, I'll tell you to bring green beans." Really, make these. They're fabulous.
