Nancy's Baked Spaghetti Squash

My husband cooked this, according to the recipe. Only adaption he made was to use ground turkey in place of the bacon,and fresh chopped tomatoes in place of the canned--basically a spaghetti sauce--and it turned out yummy. This recipe is a keeper and we will use it again, when the squash comes up for harvesting.

Zucchini Raisin Muffins

Absolutely fabulous!! These are a huge hit in my family. Since these are going to be used for school snacks, I made one healthy adaption and that was to substitute whole wheat flour for the 3/4 cup all-purpose flour. I also tossed in grated carrot, for a little more color and nutrition. My little one didn't even notice! So, he's getting a delicious, healthy snack made from scratch; I froze the whole batch and take out two at time to send with my child to school. Last note: I quadrupled the recipe, so indeed, I used a total of 3 cups of whole wheat flour, no problems. (I've heard one part whole wheat to three parts all-purpose...?) And, like I said, I tossed in about one cup of shredded carrots. Also, I added two more eggs, for a total of 6 eggs for the 4x recipe. All in all, THIS recipe is THE recipe I will be using for zucchini muffins. Simply delicious :) Thank you for sharing.

Irish Soda Bread

I made it for St. Patrick's Day, to go with our corned beef and cabbage. It turned out perfect and was a huge hit! I will keep this recipe, for sure, and will use it again. Couple things I did differently. I used milk, soured with vinegar, since I had no buttermilk. I used Greek Fage unflavored yogurt in place of the sour cream. Other than these minor changes I followed the recipe. Also, because I didn't start the recipe till one hour before our company arrived, I decided to divide the dough into two halves and bake for half the time. I baked the two loaves for 25 minutes, checked with a toothpick, still a tad bit doughy, and baked for another 5 minutes. Perfect!! Melts in your mouth with butter! I will note, that the recipe says "Dough will be sticky" and this is for sure. But don't be concerned; this, I think, is what makes the bread so delicious and moist after it's done baking. All in all, I would say this one is a keeper. Luck of the Irish to you :)

Carnation® Raisin Bread Pudding

This is a delicious comfort food for a cold winter night. It's simple, easy to make, and I will definitly be making it again, come next season. Only adaption I made was to use a half loaf of Irish Scone Bread, with raisins and a touch of rye in it. I halved this recipe and added less raisins, and it came out just fine. Only thing I was missing was ice cream or whipped cream!!!

Pumpkin Spice Bread

THIS is my new pumpkin bread recipe. It's moist, soft, just the right blend of spices. I doubled it and got four loaves, plus 6 large muffins. The muffins and one loaf of bread were devoured by my family and the other three loaves we gave away as gifts. All who recieved a loaf said it was AMAZING!!! Only adaption I made was to use a homemade pumpkin puree, which I make every October and freeze for future use. For this recipe, the thawed puree had enough "juice" that I did not need to add the water (at the end of the recipe), and the breads came out super moist. I will definitely be making this bread again, come next autumn!!

Orange Cucumber Tossed Salad

I used this recipe for a Christmas Eve dinner and again for an after-Christmas party. It got raves from everyone who ate it and it has become a favorite to accompany our family dinners. The only change I made was to use Cuties (oranges), instead of naval oranges, because they are easy to peel and they break into little pieces. This recipe is a keeper. Thanks!

Foil Barbecued Trout with Wine

Excellent!! Much, much neater and tastier than laying the fish right on the grill. Only modification my hubby, the grill master, made was to add minced garlic. We will be using this reciped from now on.

Nutty Peach Quick Bread

Incredibly soft and moist!! I made a quad. batch and all four loaves turned out just fine. Only thing I would do differently would be to puree the peaches first; that's personal preferance; I don't llike chunks of peaches in my breads. But I will be making it again :)

Chunky Potato Soup

We made this for a church supper--it was a hit and much appreciated for it's homey-ness. Only differene we made was not adding the roux. By the time the potatos and other veggies were cooked down and slightly mashed, it wasn't necessary to add the roux. We heated the milk and cheese togetherr seperately, adding about 4 cups of the potato mixture, mixing well, then stirring it all into the main soup. This soup is fabulous, very easy to make and very enjoyable on a cold night.

Chocolate Chip Oatmeal Muffins

I made these for my son's pre-k. class and you know how picky little people can be! Well, these muffins were a hit and gobbled right up by each child and their teachers. I made one adjustment: I didn't have applesauce, so I used heavy cream and added it after I beat the eggs (I made a double recipe). The muffins turned out fine and I've been asked to make them again. I will!!

Pumpkin Pancakes

Absolutely delicious!! One adjustment: in addition to the 2 cups flour, we added 1/3 cup whole wheat flour for a more healthy twist. The spices are just right, not too overpowering, but a pleasant touch.

Zucchini Cake

Fabulous cake!! I didn't feel like making zucchini bread; my little son wanted to make a cake, so I checked AR and found this simple recipe. The only catch is that my family didn't wait for me to frost it and dived right in. We all agreed the cake is delicious without the frosting. Also, because I doubled the recipte, I had an extra cake to take to a potluck. I dusted it with powdered sugar and it was a huge hit. Everyone agrees the cake is simply awesome with no frosting. I will be making it again!!

Strawberry Bread

Ohmigosh!! This was fabulous!! I had 36 oz. of strawberries going ripe very quickly and didn't want to make anything fancy, so I check A.R. and found this simple recipe. I doubled the recipe, getting four loaves worth. The only adaptions I made were to subtract 1 c. white flour and use 1 c. whole wheat flour, giving it a more healthful twist. And...I didn't feel like cutting up the strawberries, so I threw them in the blender and made a puree, using that instead of chunks. The bread turned out light and fluffy and just delightful to snack on. The recipe was a HUGE hit!!
