THIS is my new pumpkin bread recipe. It's moist, soft, just the right blend of spices. I doubled it and got four loaves, plus 6 large muffins. The muffins and one loaf of bread were devoured by my family and the other three loaves we gave away as gifts. All who recieved a loaf said it was AMAZING!!!
Only adaption I made was to use a homemade pumpkin puree, which I make every October and freeze for future use. For this recipe, the thawed puree had enough "juice" that I did not need to add the water (at the end of the recipe), and the breads came out super moist.
I will definitely be making this bread again, come next autumn!!
