Sopa De Lima (Mexican Lime Soup)

I used already cooked chicken breast that was shredded and homemade chicken broth. I used a red pepper and yellow onion. I didn't have any good fresh tomatoes so I used two cans of mexican stewed tomatoes with their juices and added pickled jalapenos in place of the green chile pepper. Couple changes but still tasted fab!

Creamy Swiss Chicken Casserole

Comforting dinner. I used shredded chicken that was boiled with seasnonings and shredded swiss cheese and fresh sliced mushrooms and threw in half an onion. This turned out great. Didn't take long to make and was cheap!

Delicious! I didn't have an hour to marinade the chicken, so I just poured some worch. sauce over the chicken while I prepped. I did put the honey mustard on the chicken, then layered the bacon then cheese and mushrooms and baked until cheese was melted. I loved this!!!

Turkey Stuffing Roll-Ups

I used a jarred gravy in place of the cream of chicken soup and milk mixture and left off the french fried onions, surprisingly I am not a huge fan of them! These were very very good and so so comforting!

Five-Veggie Stir-Fry

I changed a few things to suit what I had on hand. I was highly upset when I started making this dish and realized all the orange juice was gone. Sigh. I still decided to make this without. Still very very good and will make again. I didn't have cauliflower so I left that out and I served this with Lo Mein Noodles also from this site. Delicious meat free meal.

I left out the chicken bouillon granules (out of them) and the chinese five-spice powder (don't have any) and used frozen peas and added fresh sliced mushrooms. I really liked these as a side, but would be great as a meatless entree!

Western Salad

This was surprisingly goooood! I didn't have cucumbers, green onion or radishes but it still turned out great. I wish I wouldn't have poured the whole bottle of ranch on the salad because I don't like so much dressing on my salads. I used Doritos nacho-flavored chips.

Very easy desert or snack. I always have a hard time layering things like this in little cups. I topped mine with extra cherry pie filling instead of maraschino cherries. I also only had a little more than half a can of cherry pie filling so I didn't add any into the pudding mix.

BBQ Chicken Calzones

I used a casserole blend of shredded cheese and didn't have cilantro, but they still turned out tasty. I saw these over at Life as a Lofthouse cooking blog and knew I had to try them!! Turned out tasty! I boiled a split chicken breast with seasonings then shredded it for these.

Yummmmy! This was delicious. I added a chopped green pepper when I added in the smoked sausage and the corn ( I used frozen ). Will make this often this winter!!

This is a simple recipe but tastes really good! I loved the fresh mushrooms. This did taste like sh!t on a shingle. I only had chicken broth so that's what I used.

Delicious. Can't wait to try it with the jalapeno and red pepper (I used green in place of the red)! I didn't add the cheese, but I think it would be good with it. I used chicken broth. Great with sliced green onion on top!
