Chicken Flautas

These are delicious! I can't believe I waited this long to finally make them! I used flour tortillas because that's what I usually have on hand. I charred them over the open flame and then filled them. I used a mexican blend cheese.

Sweet and Sour Chicken III

This was good, but not my favorite. I read some of the reviews and decided to add extra of the pineapple juice (from a 20oz can) and a squirt of the kecthup. I don't think i will make this again, but it was worth a try.

Emily's Excellent Taco Casserole

While making this recipe I was thinking there are more like nachos not a taco casserole. Once trying to eat like nachos, I realized I def. needed a fork. Very yummy and super easy. I didn't have vegetarian chili, I used chili no beans. I was also out of lettuce so just topped with diced tomato and sliced green onion sour cream and salsa (and some valentine's hot sauce).

The Best Parmesan Chicken Bake

I've never had traditional chicken parmesan, so I can't compare this recipe to a traditional one. I really liked this though! So easy to make, throw it in the oven and forget about until it's done baking. I think you could sub cooking spray for the olive oil on the bottom of the casserole dish. I crushed my cheesey garlic croutons and sprinkled them on top. Only had mozz cheese. I would make this again. I used frozen Kroger brand chicken cutlets (they are flattened out for you already)and added 10 minutes to the cooking time since they were still frozen. Perfectly cooked.

Seasoned Broccoli Spears

I used a microwave steamer bowl I got at a cheap dollar store. The broccoli was cooked perfectly and seasoned perfectly. I left out the thyme and used garlic powder.

Chicken Pot Pie

I had crescent rolls on hand so I subbed those in. I usually make my own "gravy" for pot pie, but this was good with the canned. Very easy for a weeknight meal.

Classic Creamy Macaroni & Cheese

This made a nice creamy mac and cheese. I did leave out the cottage cheese (it was 2 weeks expired) and didn't do the corn flakes topping. Nice simple creamy cheesey macaroni!

Escarole and Bean Soup

Easy Baked Tilapia

Quick delicious dinner. I used frozen tilapia and followed another reviewers suggestions and melted the butter with the old bay seasoning and garlic and drizzled it over the fish. I used a package of frozen cauliflower carrots and snap peas. Delicious.

Holiday Burritos

I used leftover baked potatoes for my potatoes (great way to use up those last few baked potatoes). I did leave the onion and green chiles out because my kids wouldn't eat these if I did use them. I topped mine with some chopped green onion and valenitine hot sauce. Filling meatless breakfast!
