Southwest Chicken Bake

I decided to make these into individual packets! I layered the diced onion, frozen corn, black beans, salsa.. then topped it with a chicken breast that I had coated witht he italian dressing (i left out the taco seasoning mix, didn't feel it was needed). Topped the chicken breast with the shredded cheese. Cooked in the foil packets in the oven. Delicious! Served brown rice on the side.

Slow Cooker Sweet and Tangy Chicken

This turned out delicious! I did have to leave the green bell pepper and onion out, because I was out of them at the time. I only had one bottle of bbq sauce so I added a half bottle of teriyaki 30 minute marinade with the bbq sauce. I will be making this again, but the exact way the recipe says!

Vegetable Fried Rice

I used minute brown rice for this recipe. I had a red bell pepper instead of a green bell pepper, used frozen peas instead of canned, and used the same teriyaki sauce I used for the hawaiin chicken that I served the rice with. Turned out great!

Potato Salad II

I had 6 potatoes I had to use or loose, so I choose to make potato salad. I was looking for something simple without a lot of chopping and mixing and adding. This was supe simple. I used kraft real mayo with olive oil (that's what I had on hand) and since I happen to be an onion lover, I added some sliced green onion on top!

Cheesy Mashed Potatoes

I can't comment on the amounts of each ingredient for this recipe, because I just kind of eye-balled the milk and sour cream and butter and used what I had left of the cream cheese. I did not add any cheese into the potatoes, only on top. I didn't bake them longer than just melting the cheese on top. Tastey, but I still prefer simple milk and butter mashed potatoes (nothing to do with this recipe though!)

Spanish Chicken

I decided to change things up a bit while making this recipe. I cooked the chicken thighs in a can of diced tomatoes, then added the peppers and onions, left out the ketchup and chili sauce (keeping things simple and didn't have the chili sauce on hand). Served with roasted potatoes and broccoli.

Rita's Pasta and Meat Sauce

I used leftover sloppy joe meat that had veggies in it, so I skipped the steps for cooking the ground beef and veggies. I used tomato sauce instead of stewed tomatoes. Turned out pretty good.

Gourmet Grilled Cheese Sandwiches

I left out th mayo (kids don't really care for it). I took the crust off my bread and flattened the bread slices out... spread the cream cheese mixture on the flattened bread slice and rolled them up. I toasted them sead side down.

Best One Pot Cheese and Macaroni

I read on a blog to boil the pasta in the milk until the milk was almost absorbed then add in the mustard and cheese. That was how I did it and it was delicious. So easy, took a while to boil because I didn't have it all the way up so it wouldn't scorch the milk.

Yakisoba Chicken

I used ramen noodles without the seasoning packet (i'm cheap), and added broccoli and mushrooms. I did a mix of worchestire sauce and soy sauce and a couple squirts of ketchup (thought the kids might like it better) and only 1/4 tsp chile paste (didn't want it to be too hot for the kids). To my surprise 2 out of 3 kids ate it without complaints!

Easy Shrimp Vegetable Stir Fry

I used steak in place of the shrimp, because that's what I had on hand. I was out of cider vinegar so I used white vinegar. Turned out good, a little salty, but good.

I used a microwave steamer bowl to steam the veggies. They were a little "wet" and made the tortilla kind of soggy, other than that this was a delicious quesadillas.

Creamy Smashed Potatoes

Made these to go with chicken and noodles for a comforting dinner. I did add some butter and milk, only because they were really thick and I couldn't stir them! I used onion powder instead of onion salt. Yummy, but very thick and rich.
