Picante Chicken

This was very easy to make and a great way to use up some chicken you're not really sure to do with. I felt weird about cooking the chicken in the sauce, so I poached the chicken in seasoned water then put it in the picante sauce and cooked. I used this in some chicken enchiladas for some added flavor.

Smokey Chipotle Meatloaf

Great meatloaf, a lot different from the traditional ketchup meatloaf I am used to!! Followed recipe except used crushed saltine crackers and had to leave out the worch. sauce.

Broccoli and Onion Casserole

I think this would have been better if everything was mixed together instead of layered. I had two small heads of broccoli and used half a white onion. I still made all the sauce but only used half of it over the broccoli and didn't use 8 oz cheese just srpinkled enough on top to cover it. This was pretty good oh and I left off the topping.

Taco Rice

I sauteed some chopped onion and green pepper and added that to the rice leaving out the black olives. I liked the method of boiling the broth(I actually used water seasoned with chicken boiulon - and no I don't know how to spell that!!) and tomato sauce together then "steaming" the rice in that. This turned out nicely and I will use this recipe again. I still haven't used bagged rice yet to scared it won't turn out.

Best Black Beans

This is the best black beans side dish for all mexican foods. I have used this several times before and they are always good. I did add some chopped green pepper with the onion this time. Very good!!

Dee's Roast Pork for Tacos

I didn't follow the recipe because I had some pork that had already been cooked in the slow cooker for pulled pork sandwiches. I put all the ingredients for this recipe in a skillet and heated the meat through. This made some great tacos!!! I uesd soft flour tortillas for my tacos.

These are so good!! I used frozen pizza crust that was thawed out. I rolled it out and cut it into about 16 long breadsticks. These were soo good!!!

Baked Potato Soup I

This was so good! I didn't have leftover baked potatoes so I used the microwaved baked potatoes recipe from this site for the baked potatos. I used 4 tbls butter and 4 tbls flour with 6 cups of milk ( 1%). I didn't add any sour cream or bacon to the soup just topped it with it. Very good and so comforting!!!

Creamed Eggs on Toast

Great breakfast!! I used leftover bechamel sauce that is made just like the sauce in this recipe. I left out the chicken bouillon granules all together. Great breakfast at work.
