Cheesy Picante Quesadillas

These were cheesy and saucey. Eat them fast or the picante sauce will make the tortilla soggy... I browned mine in a skillet, to hot for the oven right now.

Pan-Seared Tilapia

Made this for the kids for lunch. They liked it, but mine didn't get good color on it, it was a weird whitish color. I tried some of it, and it was very good, had a fried fish flavor without the fried.

Pan-Fried Mustard Mayonnaise Tilapia

This tilapia turned out delicious!! I love panko crusted tilapia, and the mustard and mao mixture gave it a nice flavor!! I used an all purpose seasoning blend with some garlic powder and paprika. I would make this dish again.

Spicy Corn Dip

This is really yummy for how simple it is. I used all mayo, out of sour cream. I didn't have the mexican corn, so I just chopped up some green pepper and red onion and left out the green chiles and added some pickled jalapenos. Served with some chili cheese frito lays on top. great salad on a hot summer day.

Kathy's Delicious Italian Pasta Salad

This is yummy!! I did change a few things just to accomadate what I had on hand. Used tri0color rotini, red onion, shredded mozzrella cheese and pepperoni in place of the salami. Will make this again!!! And I had fire roasted tomatoes, could have sworn they were roasted red peppers when I bought them!!

Pork and Cabbage Soup

I used smoked sausage (bulk pork sausage is expensive!) and added carrots, green beans, and corn to get my kids to eat more veggies. I loved the cabbage in it!! i used a seasoning blend and chicken bouillon granules.

So easy and so simple! Yes other coleslaws with lots of ingredients are delicious, but this simple coleslaw is also delicious. Great for when you don't have all those extra ingredients!!

Taco Pizza

I am not reviewing the dough, I used a frozen pizza dough, since I didn't have a bread machine (but my mom just bought one from a garage sale, so this dough might be the first thing we make!!) So my review on the rest of this taco pizza goes as : it's perfect don't need to change a thing. I have used a thin picante sauce, the real cheap kind in place of the water and tomato paste. This is one of my favorite pizzas!!!Oh and of course add crushed tortilla chips or doritos on top!

Ground Beef Mexican Style

My family really enjoyed this dinner. I used mini penne because that's what I had opened in the pantry. I left the chopped tomato out and just added more salsa on top!

Red Garlic Mashed Potatoes

Yummy!! I left out the sugar, seemed weird to add it to mashed potatoes. The steak seasoning and boiling the garlic with the potatoes gave it very nice flavor. I used milk in place of the half and half.

Braised Pork Ragu

This is seriously delish!! I loved it, however mine did turn out kind of greasy, but that's totally my fault because I always fill the pan too full of oil. I didn't use any wine only chicken broth, and I only had one 14.5 oz can of diced tomatoes. I had mine up too high so my sauce thickened up nicely and actually almost dissapeared. I will be making this again.

Our Favorite Mexican Style Lasagna

The new kraft cheese with a touch of philly is my new favorite cheese!! I did use refried beans instead of whole pinto beans and used large burrito style tortillas so I just layered one tortilla at a time. This was simple and good.
