Hidden Valley Ranch Layered Vegetable Salad

I love layered salads!! I liked the combo but I added some bacon and cheddar cheese to the top. I layered mine in a big bowl as follows, lettuce, cauliflower, broccoli, carrots, peas, ranch, bacon cheese. I had already served some when I took the last pic so it's all mixed together.

Pasta Fagioli

This was a great soup! I had whole red chili's that I crushed so mine was quite spicy, which I loved. I used a mix of green and orange pasta with corkscrews also in there. I had some homemade chicken broth but not quite enough so I had to add some water.

Wacky Pasta Salad

I've never had a pasta salad without the dressing being mayo based, oil/vinegar based, or ranch salad dressing based. This was a very nice change!! I couldn't find the wacky mac pasta at Meijer so I used green and orange colored pasta and corkscrew mixed together. I used green onion in place of the red onion and also added orange bell pepper with the red and yellow. This was even better the next day. The honey mustard I used was Kraft. I would make again!!

Hudson's Baked Tilapia with Dill Sauce

This was very flavorful. I liked the cajun seasoning, had a nice kick to it without being overly spicy. I used two slices of lemon for each fish (I had frozen tilapia fillets). Will make again!!!

Three Pepper Pilaf

I chaned a few things to suite what I had on hand. I left out the tumeric and the fresh mushrooms (wish I had them though). I boiled the chicken thighs in water adding seasonings to it. I used that water for the broth. I forgot to add the onion to the chicken while it was boiling, so I sauteed the onions when the directions said to sautee the mushrooms. I did have to cook my rice longer to get it tender and ended up covering the pan. I added the tomatoes on top so they wouldn't get mushy. I also added some frozen green peas at the tend. Tasted very good and was easily prepared on a busy weeknight.

Shrimp Scampi Bake

The mustard was not overpowering like I thought it would be. I would make this again. I put everything in a skillet, didn't really want to make the house so hot using the oven.

Simple and delicious side dish. Served with shrimp scampi bake from this site. I did use fettucini and had to leave the parm. cheese off because I was out of it.

Texas Coleslaw

I followed this recipe to a t and measured all the seasonings out only using a bag of pre-shredded cabbage with carrots in it. OMG the seasoning were out of control. It felt like a paste in my mouth. Usually I never measure out my seasonings just use what I think is right, I wish I would have with this recipe because I think it has the potential to be really really good.

Easy Enchiladas

This was really good, but you don't need to put two jars of slasa on the bottom of the baking dish. I only got 8 burrito sized enchiladas out of this too. I will make this again, very easy very fast and very good!!!!!!
