Limehouse Chicken
This was delish!!! Made it with chicken breast (4 big - cut into smaller pieces) as hubby does not like dark meat. Doubled the recipe, and served on top of brown rice. (I also did not have the mint.) It was fantastic. Kids were bummed there wasn't enough to take as leftovers for lunch. House smelled great too! I would have to say that I think 5 minutes of Prep time is a bit optimistic - when you think of having to zest and juice the limes... (Like others, I was a bit sus about the lime and brown sugar - but it turned out grand.) Highly recommend. Enjoy.

Sausage, Peppers, Onions, and Potato Bake
The WHOLE family liked it! Made this as written, and while I was a bit unsure of how the onions would be taken (young kids), this dish was devoured. I thought I would have a ton of leftovers, because it seemed to be so much got eaten so fast, I barely got to enjoy it the next day. As for any suggestions, I think next time I would par boil the potatoes so they can cook up more quickly (I didn't think frying did that much), and for my taste, I would add more peppers and onions. Enjoy.

I should have read the reviews first...especially the ones that talk about turning down the temperature! For flavor and ease it is 4 stars, but for the temperature and cooking... -3. I only got as far as the 20 min on 230'C, and they were dark them out just as burning was going to occur. I would have had smoke alarms going off if I had kept them in the oven for the other 20 minutes. I will try again, but as others say - have to pay much more attention to the cooking in the oven part - and figure out what really works.
