Tropical Grilled Pork Chops

This was amazing! I didn't have soy sauce or pineapple, but used two mango, and a bit of worstishire sauce. i also cut the sugar in half, but it could be omitted as i thought it was sweet enough with the fruit. cooked the pork in the marinade. I then used this as the protein and the dressing on my salad. Wow, so good!

Parmesan and Basil Chicken Salad

Wow! This was awesome! I didn't worry about exact measurements cuz I always improvise and it turned out fantastic! I added about a half teaspoon of dill because I like dill and I added some dried cranberries because I like the sweetness. 2 scallions I had on hand made their way into my sandwich too. MMMMMMMmmmmm...So good!

Beet Greens and Green Beans with Tomato and Onion

Wow! I don't like cooked green beans, but this was good! I used balsamic vinegar based on preference. It was a fresh flavor that went well with my pork loin.

Roasted Brussels Sprouts with Apples, Golden Raisins, and Walnuts

This was a great recipe and I don't like Brussel sprouts! I altered it just a bit to suit my taste. I tossed the veggies in bacon grease and olive oil before baking. Near the end of cooking I added the apples as suggested by another reviewer and crumbled bacon. What doesn't taste good with bacon? Topped with pecans, forgot the raisins, and didn't have the wine. Turned out pretty good, but I bet the raisins and wine would have been tasty too.

Lentils with Chorizo

Even my picky husband took seconds of this dish. He doesn't like soup, so I made it much much thicker. I drained the lentils, but not before I used a little of that juice to purée the veggies. since I made it so thick, it would have been good on top of something else fresh tasting, but I don't know what. It was a great earthy taste followed by a bit of spice from the chorizo I used.

Adult Cherry Vanilla Frozen Yogurt

Oh wow! Super tasty and I feel good about myself when eating this. I didn't have any cherries on hand so I used a small jar of cherry jam that wouldn't be missed and thus omitted the sugar. I also apparently thought that coffee creamer and half and half were the same thing...actually not so, but I used vanilla flavored creamer anyway and it turned out well. A little more icy in texture than if I had used more fat, but I feel better about eating it this way. I recommend adding some sort of vanilla flavor to this. The Greek yogurt I used made the texture creamy after the initial icy-ness. Thanks!

Baked Spaghetti Squash Lasagna Style

Wow! This recipe is awesome! The squash is just the same as angel hair pasta. I added some kosher salt to the recipe, chili flakes, and a bit more cheese. I also strained the tomatoes to reduce the liquid. Turned out G.R.E.A.T. My bf who is a real meat and potato's guy said I need to make this (Vegetarian) meal more often.
