Blackened Tilapia with Secret Hobo Spices

This was a very flavorful spice seasoning, but way too strong for me. I couldn't taste the natural flavor of the fish at all. I cut back on the cayenne and paprika and it was still too overpowering.

Quinoa with Chickpeas and Tomatoes

Parmesan and Basil Chicken Salad

Wow! This was awesome! I didn't worry about exact measurements cuz I always improvise and it turned out fantastic! I added about a half teaspoon of dill because I like dill and I added some dried cranberries because I like the sweetness. 2 scallions I had on hand made their way into my sandwich too. MMMMMMMmmmmm...So good!

Tres Leches (Milk Cake)

I used a white cake mix as recommended by others and cut the whole milk by 1/2 cup. I added some hazelnut flavoring and cinnamon. The flavor was outstanding, however it came out a little too wet for me. The pieces of cake were so wet they didn't stay together and rather than delicious cake I had delicious mush. I think next time I will cut back on the filling more significantly. I think I will also leave this in the fridge uncovered.

Fettuccini with Basil and Brie

Very good. I added extra garlic and some plain yogurt to substitute some creaminess since I didn't quite have enough brie. I used half the oil called for and I still did not like all the oil in this recipe. I will look for an oil substitute. Suggestions welcome!!

Fish Tacos

This tasted really good, but it was a lot of work. I made the batter, white sauce, and pico de gallo (which really was a nice addition) but I didn't fry the fish. I used just a couple tbsp's oil in a fry pan...I feel healthier. I also only used half tsp cayenne so I could taste more than just hottness.

Baked Spaghetti Squash Lasagna Style

Wow! This recipe is awesome! The squash is just the same as angel hair pasta. I added some kosher salt to the recipe, chili flakes, and a bit more cheese. I also strained the tomatoes to reduce the liquid. Turned out G.R.E.A.T. My bf who is a real meat and potato's guy said I need to make this (Vegetarian) meal more often.

Apple Brie Quesadillas

I thought this was going to be great, but the flavors didn't come together to make something I'd like. It tasted like apples, brie, and onions. I usually love anything with balsamic vinegar, but I guess this is an exception. I agree with the other reviews about how hard it is to keep these together too.

This was pretty good. I agree that it tastes better with icecream. It's a very different light flavor that I think someone who likes bread pudding better than I could appreciate more.
