Watermelon Fire and Ice Salsa

This was good and received rave reviews! I used fresh garlic, a small whole jalapeño (which made it a little too spicy for me) and added some chopped fresh sweet cherries. Cucumber or mint might also be good in this recipe. Thanks for sharing!

Slow Cooker Pumpkin Steel Cut Oats

I'm sorry, but I didn't like this at all. I used 1/2 cup real sugar and cooked it on the warm setting overnight as a reviewer suggested and I ended up with something between mush and jello. I tried to fix it up with sugar and milk in my breakfast bowl but i just couldn't eat it. The good news is I used up my steel cut oats, so I don't have to find another way to use them.

Aloha Coleslaw

So I took this recipe and made it over the top. I used 1/2 head shredded cabbage, some carrots, some chopped almonds, craisens, toasted coconut, cilantro, chunk pineapple, and a dressing made from half mayo and half vanilla yogurt with 3tbsp of coconut white balsamic vinegar. Hubby said it was too sweet and not tangy enough. Maybe next time I'll use Apple cider vinegar instead. It was still really good.

Oatmeal Peanut Butter Cookies

These were great. I cut the sugar by 1/2C, added 1tbsp vanilla, and 1/2C old fashioned oats because that is what I like. Dough was very thick; I would not attempt with a hand mixer. Thank goodness for my kitchen aid. I dropped them by overflowing teaspoon on cookie sheet and baked for 10min. Turned out perfect, not runny at all. Slightly crunchy on the outside, soft on the inside. The oatmeal was not particularly noticeable in the end product, which could be fixed by altering the flour-oatmeal ratio.

Sardines with Sun-Dried Tomato and Capers

This packs TONS of flavor and is Very acidic and salty. I added some fresh chopped tomatoes for freshness and a pinch of sugar to cut the acid. I also let it sit to meld the flavors together. The flavor packs quite a punch. I think this was just an overload of flavor in my mouth. I think it would be good if the flavor could be spread out somehow, but I have no ideas. This recipe was good to try but I will not make it again.
