Imitation Meatloaf

Reviewed: Sep. 21, 2001
This is a fabulous recipe for our vegetarian household! Cook the lentils and rice with more water than usual to make the loaf not so dry. I also mix a little cheese into the loaf and then sprinkle some more on the top. This is truly the best vege-loaf I've ever had!

My Fly Stir-Fry

Reviewed: Jan. 10, 2004
This review is just of the sauce; I used it with a tofu/veggie stir fry. And it was delicious! Very tangy and lots of flavor. I've been looking for a nice light sauce because I'm tired of those heavy, thick pre-made sauces and this is perfect. I also added some red pepper flakes to give it a little more kick.

The Best Rolled Sugar Cookies

Reviewed: Dec. 19, 2003
These were great cookies. Easy to make, easy to roll out and delicious to eat. We rolled out the dough in two batches and it didn't get sticky at all. They baked up nice and soft, too. This is definitely my Xmas cookie recipe from now on!

Best Ever Split Pea

Reviewed: Dec. 19, 2003
A wonderful soup! I didn't puree it because it cooked up so nice and thick. Also, mine was done after only about 1 3/4 hrs. (of course, the extra time simmering just added to the flavor). Will definitely try it with curry; that sounds great.

Alla Checca

Reviewed: Nov. 11, 2004
So simple and so good!! My whole family loved it and it was great not having to turn on the stove in the middle of summer. The best part was the yummy olive oil left in our bowls that we sopped up with bread. Heaven!

Cottage Cheese Roast

Reviewed: Dec. 19, 2003
Delicious and amazing! I added a bit more cornflakes, as has been suggested here. I can already think of lots of additions and variations to try. Thanks for a great recipe; this one is definitely a keeper!

Cream Puffs

Reviewed: Jun. 18, 2005
These cream puffs are extremely easy and very good for a 'shortcut' recipe. The taste is a bit egg-y, but once they are filled you don't notice it. Note: I didn't try the filling for the recipe; this review is only for the puffs themselves.

Vegetarian Gravy

Reviewed: Dec. 6, 2002
This is a delicious and tangy vegetarian gravy. My mom and I have searched for years for a gravy that could stand up to the fat & meat based fare at Thanksgiving and this recipe definitely does it. Even the meat eaters at the table were impressed and asked for seconds! I added about 2/3 c. mushrooms, which I cooked with onions and garlic (this means that it needed to cook for several extra minutes to cook off some of the water released from the mushrooms). Wonderful gravy--most definitely a part of my permanent file.

Caramel-Glazed Flan

Reviewed: Mar. 7, 2005
This was really delicious and so easy. The texture could have been just a bit creamier, but the taste was heavenly. The caramel sauce took on a nice, maple-syrupy flavor. The presentation was lovely as well. Definitely a keeper.

Chickpeas in Tomato Sauce With Feta and Wine

Reviewed: Aug. 20, 2002
This recipe was very easy and quite good. I used red wine instead of white because that's what I had. And I supplemented the feta with a bit of blue cheese, because I didn't have quite enough feta. And it was all delicious! I think this dish would also be very good if you mashed the chickpeas slightly and used it as a filling for pita sandwiches (maybe with fresh sliced tomatoes, cucumber and ???)

This was a wonderful corn dog batter! Crunchy, just the tiniest bit sweet--yum! Thanks!

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Reviewed: May 17, 2002
This sauce was delicious! I had homemade tortellini and I didn't want a sauce that would over-power their flavor. This sauce fit the bill perfectly. Next time I would use a bit more cheese (my family are big cheese-lovers) and I would add the green onions at the very end of the cooking. They got rather soggy and gray. This is definitely one that I'll keep.

Sam's Famous Carrot Cake

Reviewed: Apr. 15, 2005
As other reviews say, this cake is fabulous. Moist, tasty, delicious. I added a bit of allspice and nutmeg in addition to the cinnamon and frosted it with a cream cheese/allspice frosting. Perfect!

Oranged Cranberry Sauce

Made this for Thanksgiving and everyone liked it. Sweet, but with a nice tang from the citrus.

Gourmet Sweet Potato Classic

Reviewed: Nov. 28, 2003
These sweet potatoes were fabulous! I used less sugar (1/2 c. brown and 1/3 c white) because I didn't want it quite as sweet and it was still plenty sweet. I think this dish would be interesting if it were a bit spicier--maybe add a bit of cloves or allspice? Definitely a permanent part of my holiday menu.

Cornucopia Chili

Reviewed: Mar. 13, 2002
This was truly a wonderful chili. My whole family loved it. I used the amount of TVP called for and it seemed like way too much, though. I would use less next time, or possibly try flavored tofu crumbles.

Tomato Pesto Batter Bread

Reviewed: Sep. 21, 2001
This bread was quick, easy, and wonderful. I used about 1/2 & 1/2 w.w. flour and white flour to make it a little more hearty. I also baked it as a round loaf on a flat cooking sheet to give it a crispier crust. YUM!

Jamie's Minestrone

Reviewed: Jan. 8, 2002
My whole family adored this soup! It was truly fabulous. Tangy, just the tiniest bit sweet, and lots of flavors/textures. I added almost double the pasta, though. Next time, I'm going to try it in my crockpot to give the flavors plenty of time to get to know each other.

Cream Cheese Tart Shells

Reviewed: Jun. 18, 2005
Okay, these really are amazing! This recipe seems almost too simple to work, but it does and the pastry comes out flaky and crispy (if a bit greasy). I used both mini-muffin tins and regular size and both were great. I found it took about 15-25 minutes to bake the unfilled shells.
